Overripe Banana Recipes: 7 Uses for Black Kela Beyond Bread
A banana with a black, freckled skin is usually at its sweetest, not past saving. If the flesh inside is cream to light brown, smells sweet and shows no mould, sour smell or leaking juice, overripe kela is ideal for shakes, pancakes, halwa, one-ingredient ice cream and the freezer. Banana bread is only the start.
Quick facts
- Still good: black or spotty skin, soft cream or tan flesh, sweet smell
- Bin it: mould on the stem or flesh, a sour or alcohol smell, oozing liquid, fruit flies inside
- Freeze: peeled, sliced, on a tray first, then bagged
- Seven uses below: shake, pancakes, halwa, ice cream, overnight oats, raita, banana bread
Is a black banana safe to eat?
Usually, yes. As a banana ripens, its starch turns into sugar and the skin breaks down, so the brown spots spread until the whole peel goes dark. Those sugar spots are why overripe bananas taste so sweet. A completely black skin on its own says nothing bad about the fruit inside.
What matters is the flesh. Peel one and check:
- Fine: soft, cream to light brown, maybe a few darker streaks, smells strongly of banana.
- Not fine: grey or fuzzy patches, a sour, vinegary or boozy smell, watery liquid pooling in the skin, or a wet, collapsing texture with fruit flies around it.
Mould on the stem end can travel into soft fruit, so if you see fuzz there, throw the banana away rather than cutting round it. For the science of why bananas brown so fast and why carbide-ripened ones look different, see how kela ripens.
Peel before you freeze
Never freeze a banana in its skin. The peel turns black and slimy and is almost impossible to remove frozen. Peel, slice into rounds about 2 cm thick, lay them on a plate lined with baking paper so they do not touch, freeze for two hours, then tip into a labelled bag. The slices stay separate, and you can take out a handful at a time.
1. Banana shake that needs no sugar
- Blend 1 very ripe banana (fresh or frozen slices) with 250 ml cold milk.
- Add a pinch of elaichi or a few soaked almonds if you like.
- Blend 30 to 40 seconds. Taste first: overripe kela is usually sweet enough without sugar.
Frozen slices make it thick, like a milkshake from a juice shop, without ice cubes watering it down. Our guide to smoothie combinations covers which fruits blend well with it. The old worry about combining kela and doodh is a tradition rather than a proven hazard, and is discussed elsewhere on the site.
2. Two-ingredient banana pancakes
- Mash 1 ripe banana smooth with a fork.
- Beat in 2 eggs. For a firmer pancake, add 2 tablespoons of atta or oats.
- Heat a non-stick pan on low to medium with a few drops of oil.
- Pour small rounds, about 2 tablespoons each. Cook 1 to 2 minutes until bubbles appear, flip gently, cook another minute.
Keep them small. Big ones tear when flipped because the batter has no gluten to hold it. Makes about 6 small pancakes.
3. Kele ka halwa
A quick desi sweet that tastes richer than the effort.
- Mash 3 overripe bananas.
- Warm 1 tablespoon ghee in a kadai, add the mash, and stir on medium for 6 to 8 minutes until it darkens and stops looking wet.
- Add 2 tablespoons sugar or gur (taste first, it may need less), a pinch of elaichi and a few chopped nuts.
- Cook 2 more minutes until it leaves the sides of the pan.
It keeps in the fridge for two days. Cut nuts small or leave them out for children under five.
The blacker the peel, the less sugar the recipe needs.
4. One-ingredient banana ice cream
This is the trick people do not believe until they try it. Blend frozen ripe banana slices in a food processor or strong blender. First it crumbles, then it looks like oats, then, after about two or three minutes of scraping down, it turns creamy like soft-serve. Eat it straight away, or freeze it for an hour for a firmer scoop. Add a spoon of cocoa, a little peanut butter, or crushed pista with elaichi for a kulfi-style version.
5, 6 and 7: oats, raita and banana bread
- Overnight oats: mash half a ripe banana into half a cup of oats with 150 ml milk or dahi, cover, and refrigerate overnight. The banana sweetens it.
- Kele ka raita: sliced ripe banana folded into whisked dahi with roasted zeera and a pinch of salt or sugar. Make it just before eating, because the banana browns and softens.
- Banana bread: the classic, for when you have three or more. Use the darkest ones; they give the best flavour and moisture.

How to slow bananas down before they get this far
Bananas give off ethylene gas, which speeds their own ripening and anything stored next to them. Keep them away from other fruit in a fruit bowl. Wrapping the stems in cling film may slow things slightly. Once they reach the ripeness you like, move them to the fridge: the skin will darken quickly, but the flesh stays good for a few extra days. Then freeze before they turn.
In Unani thinking, banana is described as heavy and moist, and older relatives sometimes kept very ripe bananas away from someone with a cold. That is traditional temperament theory, not a tested rule; ripe banana is ordinary food for most people.
Overripe bananas are sweeter, so people with diabetes should count them as part of their carbohydrate for the meal and keep the portion to what their care plan allows. People with advanced kidney disease are often told to limit potassium, and bananas are a well-known source, so they should follow their kidney team’s advice. For babies starting solids, mashed ripe banana is a common first food from around six months; never sweeten baby food with honey before the first birthday. Throw out any banana with mould, and seek medical help if someone has vomiting or diarrhoea that lasts more than a day, includes blood, or comes with signs of dehydration.
Overripe banana questions
Are black bananas safe to eat?
Yes, if the flesh is cream to light brown, smells sweet and shows no mould. A black skin just means the starch has turned to sugar. Throw it out if it smells sour or boozy or leaks liquid.
How do I know if a banana has gone bad?
Look for mould on the stem or flesh, a fermented or vinegar smell, oozing juice, grey slimy flesh or fruit flies coming from inside. Dark streaks alone are normal in an overripe banana.
Can you freeze bananas?
Yes, peeled. Slice and freeze on a lined tray, then bag them. They are best used within about three months for taste. Use them straight from frozen in shakes and ice cream, or thaw for baking.
Why do frozen bananas turn brown?
Air exposure browns the cut surface. It is harmless. Press the air out of the freezer bag, or squeeze a few drops of lemon juice over the slices before freezing if colour matters.
Can I make a banana shake with overripe bananas?
Yes, they make the best shake because they are so sweet. Blend one with 250 ml cold milk and skip the sugar. Frozen slices make it thick.
How do you make banana ice cream without cream?
Freeze ripe banana slices, then blend them for two to three minutes, scraping down, until creamy. That is it. Add cocoa, peanut butter or elaichi for flavour.
Are overripe bananas good for people with diabetes?
They are not banned, but they are sweeter than less ripe ones. Eat a small one with a meal containing protein or fibre, and count it within your plan. Follow your own doctor’s or dietitian’s advice.
Can babies eat overripe bananas?
Yes, from around six months when solids begin, mashed smooth, as long as there is no mould or sour smell. Do not add sugar, and never honey before one year.
How do I stop bananas ripening so fast?
Keep them away from other fruit, out of direct sun, and move ripe ones to the fridge. The skin will darken there, but the inside holds for several more days.
