How to Revive Wilted Vegetables and Use Up Overripe Fruit
Limp is not the same as spoiled. A floppy bunch of palak, bendy carrots or wilted dhania has only lost water, and 15 to 30 minutes in ice-cold water puts most of it back. Slime, mould, a sour smell or a fizzy taste mean the food has actually gone bad, and no trick fixes that. This guide shows how to revive wilted vegetables, how to know if vegetables are bad, and what to cook with overripe bananas, mangoes and tomatoes.

Why vegetables wilt (and why ice water works)
Every plant cell is like a tiny water balloon. When it’s full, the leaf or stick stands firm. After harvest, the vegetable keeps losing water through its surface, but it has no roots to refill. So the balloons go soft and the leaf flops.
Soaking lets the cells drink back some of that water. Cold water works best because cold also slows the vegetable’s breathing, so it firms up without losing more sugar. This only works while the cells are still alive. Once they’ve broken down into slime, they can’t refill.
How to revive wilted vegetables, step by step
- Sort first. Pull out any leaf that’s slimy, black or smells bad. One rotten leaf spreads to the rest.
- Trim. Cut 1 cm off stem ends and carrot tops, so there’s a fresh surface to drink through.
- Soak. Fill a large bowl with cold water and a handful of ice cubes. Submerge the vegetables.
- Wait. Leafy greens and herbs: 15 to 20 minutes. Carrots, mooli and celery: 30 minutes to 1 hour. Very bendy carrots can sit in water in the fridge overnight.
- Dry well. Spin in a salad spinner or pat dry in a clean towel. Wet leaves rot quickly.
- Use soon. Revived vegetables are best eaten the same day or the next. Store them wrapped in a dry cloth in a box in the fridge.

Mould rule of thumb: on hard vegetables like carrots, cabbage, capsicum and gobi, you can cut away at least 2 to 3 cm around and below a small mould spot and use the rest. On soft ones, like tomatoes, cucumbers, berries, peaches or cooked food, throw the whole thing away, as the threads run deeper than you see.
Why is my spinach wet in the bag?
Spinach leaves keep breathing after they’re cut, and they give off moisture. In a closed plastic bag in the fridge, that moisture collects as drops. Wet spinach leaves then start to break down and go slimy, often within 2 or 3 days.
The fix is simple. Store palak unwashed, wrapped loosely in a dry cotton cloth or paper towel, inside a box or an open bag. Change the cloth if it gets damp. If a few leaves are already slimy, pick them out and cook the rest that day. If the whole bag is slimy and smells, throw it away.
Using up overripe fruit
A banana with a brown speckled peel is at its sweetest. So is a mango that’s going soft. Overripe fruit is fine to eat as long as there’s no mould, leaking juice, or sour, alcoholic smell.
Overripe banana shake
- Peel 2 very ripe bananas. Break them into pieces.
- Blend with 300 ml cold milk and 4 to 5 almonds or a spoon of oats if you like.
- No sugar needed; very ripe bananas are sweet enough.
- Serve straight away. It browns if left.
Freezing tip: peel overripe bananas, cut in halves, and freeze in a bag. Blended from frozen, they make a thick, ice-cream-like shake.
Soft tomato chutney
- Chop 4 soft, overripe tomatoes (about 400 g). Cut away any bad spots first.
- Heat 1 tablespoon oil, add ½ teaspoon zeera, 2 chopped garlic cloves and 1 green chilli.
- Add the tomatoes, ¼ teaspoon haldi, ½ teaspoon red chilli and salt.
- Cook on medium for 12 to 15 minutes until thick and jammy.
- Cool and keep in a clean jar in the fridge for up to 5 days.
Soft mango, three quick ways
- Aamras: blend the flesh of 2 soft mangoes with 100 ml cold milk. Eat with puri or roti.
- Mango lassi: 1 cup mango pulp, 1 cup dahi, ½ cup cold water, a pinch of elaichi. Blend.

Other quick rescues
- Apples gone floury: peel, slice and cook with a little water and cinnamon for 10 minutes. A soft stewed apple for dessert or breakfast.
- Soft guava: blend with water, strain the seeds and make a guava drink with a pinch of salt and chaat masala.
- Wrinkled capsicum, soft carrots, tired lauki: into a vegetable soup, khichdi or salan.
- Stale bread plus overripe banana: mash one banana into a beaten egg with a splash of milk, dip bread slices and cook on a tawa like French toast.
Myth: soaking vegetables in salt water freshens them and makes them safe
The truth is that salt water does the opposite for crispness. It pulls water out of cells, so vegetables go limper. A short salt soak can help float out insects from gobi or greens, and that’s useful. But it doesn’t make spoiled food safe. People believe it because it’s how we clean produce, and cleaning feels like fixing. Use plain cold water to revive, and bin anything spoiled.
Surprising facts
- Brown bananas have more sugar than yellow ones. As a banana ripens, its starch turns into sugar, which is why overripe bananas need no added sweetener in a shake.
- A carrot is roughly 88% water. That’s why it goes bendy so fast out of the fridge, and firms up so well after a soak.
Don’t taste food to check if it’s bad. If you’re unsure, throw it out. Mould on soft fruit, cooked food, bread or jam means the whole item goes. Fruit that smells like alcohol or vinegar has fermented. A bitter lauki, tori or kaddu must be thrown away whole, even if the rest looks fine. For babies under 1, use only fresh, fully sound fruit, with no added sugar or salt, and don’t give honey in any rescue recipe. If someone gets vomiting or diarrhoea after eating spoiled food, give plenty of fluids and see a doctor for blood in stool, fever of 39 °C or above, or signs of dehydration.
