Sour Yogurt Uses: What to Do When Dahi Turns Too Khatta

Khatti dahi is not spoiled dahi. Yogurt that has turned too sour for raita is the best base for kadhi, a softer marinade, fluffy dhokla, tangy bhature dough and a hair mask. It only becomes waste when it shows mould, pink or coloured patches, a rotten or yeasty smell, or fizz.

Quick facts

  • Sour but fine: sharp, clean tang; firm or slightly watery; white or creamy colour
  • Spoiled: fuzzy or pink, orange or black spots, slimy strings, cheesy or yeasty smell, bubbles
  • Best uses: kadhi, marinade, dhokla and idli batter, bhature or naan dough, chaas, hair mask
  • Fix future batches: shorter setting time and fridge straight after

Why does dahi go so sour?

Dahi sets because friendly bacteria eat milk sugar and turn it into lactic acid. They do not stop when the dahi sets. Left warm, they keep making acid, and the dahi grows sharper, firmer and starts to weep whey. In a hot kitchen, an extra four or five hours of setting, or a night on the counter, is enough to take dahi from mild to mouth-puckering.

The fix for next time is in our homemade dahi guide: check the pot as soon as it sets and move it to the fridge. Cold slows the bacteria right down. This page deals with the bowl you already have.

How do you tell sour dahi from spoiled dahi?

SignJust sourSpoiled
SmellSharp, clean, tangyCheesy, yeasty, rotten or like old socks
LookWhite, some clear whey on topFuzz, pink, orange, green or black spots
TextureFirm or a bit grainySlimy, stringy, or gassy with bubbles
Taste (tiny bit)Very sour, nothing elseBitter, fizzy or “off”

Clear yellowish liquid on top is whey, not spoilage. Stir it back in or pour it off. Pink or coloured patches are not “a little bit of mould”; they mean the whole pot goes. Dahi is soft and moist, so growth spreads beyond what you can see. Do not spoon around it.

Kill the sourness with fresh milk

If dahi is too sour for raita or for eating plain, whisk in 2 to 3 tablespoons of cold fresh milk per cup. It softens the acid enough for most raitas and lassi. Do it just before serving; leave it in the fridge, not on the counter.

Kadhi: the dish that wants sour dahi

Ask any good kadhi maker and they will tell you fresh dahi gives a flat kadhi. The tang is the point. Sour dahi also needs less lemon or amchur to balance it.

  1. Whisk 1 cup of sour dahi with 3 tablespoons of besan until there are no lumps.
  2. Add 3 cups of water, half a teaspoon haldi, a pinch of red chilli and salt. Whisk again.
  3. Pour into a pot and bring to a boil on medium heat, stirring all the time until it boils. Stirring stops the dahi splitting.
  4. Lower the heat and simmer 20 to 25 minutes, stirring now and then, until it thickens and loses the raw besan taste.
  5. Add pakoras if you like, then pour over a tarka of oil or ghee, zeera, methi dana, dried red chillies and curry leaves.

Sour curd marinade, dhokla and dough

Marinade

Acidic dahi tenderises the outside of meat and gives tikka its tang. Mix 1 cup of sour dahi with 1 tablespoon ginger-garlic paste, 1 teaspoon red chilli, half a teaspoon garam masala and salt. Coat 500 g chicken pieces and marinate in the fridge for 2 to 8 hours. Longer can turn the surface mushy. Discard leftover marinade that touched raw meat.

Dhokla and batters

Sour dahi works well in instant dhokla, suji idli, and uttapam batters, where the acid reacts with baking soda or Eno for a better rise. For suji dhokla, mix 1 cup suji with 1 cup sour dahi, half a cup water and salt, rest 15 minutes, add 1 teaspoon fruit salt just before steaming, and steam 12 to 15 minutes.

Dough

A few tablespoons of sour dahi in bhature, naan or kulcha dough makes it softer and slightly tangy. Use it in place of some of the water.

Chaas

Blend 1 cup sour dahi with 2 to 3 cups chilled water, salt, roasted zeera and mint. Dilution makes the sourness pleasant. For the salt-or-sugar question, see dahi with namak or cheeni, and for a cooling rice dish, dahi chawal.

Sour is a flavour. Pink, fuzzy or fizzy is a warning.

Sour curd for hair: what it can and cannot do

Plain dahi is a long-standing home hair mask. It can make hair feel softer and smoother for a wash or two, much like a conditioner. Sour dahi works the same way. It does not stop hair fall or grow hair. Apply half a cup to lengths and scalp, leave 20 to 30 minutes, then wash out with shampoo, because it is a rinse-off mask. Use only sour dahi that is fine to eat; spoiled or mouldy dahi has no place on your scalp either. More food-saving ideas are in our Zero-Waste Kitchen hub.

The traditional view

In many homes, the sourest dahi was set aside for kadhi on purpose, and some cooks deliberately left a bowl out to sour. Ayurvedic texts describe sour curd as heating and advise against it in some seasons; that is a traditional view on food qualities, not a safety rule.

Before you try it

Any dahi with mould, pink or coloured spots, slime or a rotten smell must be thrown away, not cooked into kadhi. Heat does not make spoiled dairy safe. Pregnant women, babies, older people and anyone with a weak immune system should use only dahi made from boiled or pasteurised milk and kept in the fridge. Very sour foods can bother people with acid reflux or mouth ulcers. A scalp that stings, reddens or flakes after a dahi mask should be rinsed at once. Seek medical help for vomiting or diarrhoea lasting over a day, blood in stool, fever above 38°C or signs of dehydration after eating dairy.

Sour yogurt questions

Is sour yogurt safe to eat?

Yes, if it is only sour. Extra sourness just means the bacteria made more acid. If it has mould, coloured spots, slime, bubbles or a rotten smell, it is spoiled and should be thrown away.

What can I make with sour curd?

Kadhi is the classic. Sour curd is also great in chicken marinades, suji dhokla and idli, bhature or naan dough, chaas and as a rinse-off hair mask.

How do I make sour dahi less sour?

Whisk in some cold fresh milk, or dilute it into chaas or lassi with water and a little sugar or salt. Draining off the whey also removes some of the sharpness.

What does spoiled yogurt look like?

Fuzzy mould, pink, orange, green or black spots, slimy strings, gas bubbles or a puffed container. A cheesy or yeasty smell is another sign. Clear liquid on top alone is just whey.

Why does my kadhi split?

Usually because it was not whisked with enough besan or not stirred until it boiled. Keep stirring from cold until the first boil, then simmer gently.

Can I use sour dahi for raita?

Mildly sour dahi is fine with a splash of fresh milk. Very sour dahi is better used in cooking, where the tang is welcome.

How long does dahi last in the fridge?

Homemade dahi usually stays good for a few days in a closed container in the fridge. It gets sourer each day. Use clean, dry spoons to make it last.

Is sour curd good for hair?

It can soften hair as a rinse-off mask, like a conditioner. It does not stop hair fall or dandruff by itself. Wash it out within 30 minutes.

Can I give sour curd to children?

Children who already eat dahi can have mildly sour dahi that is fresh and refrigerated. Very sour dahi may sting mouth ulcers. Never give spoiled dahi to anyone.

Can I use sour yogurt to set new dahi?

It works, but the new batch may come out sour too. A spoon of fresh, mild dahi makes a better starter.
