How to Grow Oyster Mushroom (Dhingri) on Straw at Home

Oyster mushrooms don’t grow in pots or from seeds. They grow from spawn, a grain colonised by the fungus, packed into bags of pasteurised wheat straw. Get clean spawn, heat the straw in hot water, keep the bags dark and warm for two to three weeks, then cool and humid, and you can pick your first clusters about a month after starting. That is how to grow oyster mushroom (dhingri) at home, and the cool months from October to March are exactly the right time in the plains.

The short version

  • What you need: oyster spawn, clean wheat straw (bhoosa), polythene bags, a big pot, a dark corner
  • Season (plains): October to March; the hills, spring and autumn
  • Bag size: about 35 x 50 cm, holding roughly 2 to 3 kg of wet straw
  • Spawn run: 2 to 3 weeks in the dark, around 24C to 25C
  • Fruiting: around 20C, high humidity, light and fresh air
  • First harvest: about 3 to 5 weeks after bagging, then 2 to 4 more flushes
  • Main enemy: green mould (Trichoderma) from dirty straw or hands

Why do the usual garden questions not apply?

People search for “oyster mushroom seeds” and “oyster mushroom leaves turning yellow”. Mushrooms have neither. The “seed” is spawn, usually wheat or sorghum grain fully covered in white mycelium, sold by agricultural universities, research institutes and private growers. There are no leaves; a yellowing problem in a mushroom bag is usually old caps drying out or a bacterial blotch, covered below.

Before eating anything you grow, read our guide on poisonous wild mushrooms. Only eat what grows from known spawn, and never pick wild khumbi to “add” to your crop.

When can you grow it in each zone?

ZoneStart bagsWhy
Karachi, coastal humidNovember to FebruaryMild and humid; heat above 30C stalls fruiting
Multan, Sukkur, BahawalpurMid October to FebruaryDry air: mist often, keep bags in an inner room
Lahore, Faisalabad, DelhiOctober to early MarchIdeal; protect from the coldest January nights indoors
Islamabad, PeshawarOctober to November, February to AprilToo cold in midwinter without a warm room
HillsApril to June, September to OctoberWinter too cold

Summer in the plains is not mushroom weather. Above about 30C, bags contaminate fast and caps turn tough.

How do you set up a straw bag, step by step?

  1. Chop and soak. Cut clean, dry wheat straw into pieces about 5 to 10 cm. Soak overnight in plain water so it absorbs moisture evenly.
  2. Pasteurise. Drain, then put the straw in a large pot or drum of hot water held at about 70C to 75C for 1 to 2 hours. Use a kitchen thermometer. Boiling is not needed and cooks the straw too far.
  3. Drain and cool. Spread on a clean sheet or hang in a cloth bag until it is cool to the touch and damp, not dripping. Squeezed in a fist, only a few drops should fall.
  4. Wash up. Clean the table with soap, wash hands and forearms, and close fans and windows for this step.
  5. Layer. In a polythene bag, put a 5 cm layer of straw, a sprinkle of spawn, and repeat to the top. Spread the spawn evenly through every layer, not dumped in the middle, and use the amount your supplier gives for that bag size.
  6. Close and pierce. Tie the top. Make 10 to 15 small holes or slits all around with a clean knife or needle.
  7. Incubate. Keep in a dark, clean spot at around 24C to 25C. The bag turns white as mycelium spreads, usually in 2 to 3 weeks.
  8. Fruit. When fully white, move it to a cooler, lit spot (indirect light, not sun), widen the slits, and mist the air around the bag two or three times a day.

The thermometer, not the boil

Hot water around 70C to 75C kills most competing moulds while keeping friendly microbes that help oysters win. Boiling the straw strips that protection and also wrecks its texture. One cheap kitchen thermometer is the single best investment in this whole project.

How do you care for bags while they fruit?

  • Humidity: keep the air moist, ideally around 85 to 90 percent. In a room, hang a wet jute sack nearby or mist the walls and floor. Don’t pour water on the bag.
  • Fresh air: long, thin stems with small caps mean too much carbon dioxide. Open a window for a few minutes twice a day.
  • Light: normal indoor daylight is enough to tell the fungus to fruit. Never direct sun.
  • Temperature: roughly 18C to 25C. A Lahore room in November is near perfect.

When are oyster mushrooms ready to pick?

Pinheads appear at the slits and swell into clusters within about 3 to 6 days. Pick when the caps are fully formed but their edges are still slightly curled down, before they flatten and turn up at the rim. Twist the whole cluster off at its base or cut it flush with the bag.

After a flush, let the bag rest a week, keep misting, and the next flush follows. Expect two to four more, each smaller. Then the straw goes onto the compost pile or in a garden bed.

Use them the same day or keep in a paper bag in the fridge for two to three days. Cook them; don’t eat oyster mushrooms raw.

Contamination and pests: what to watch for

SignWhat it isWhat to do
Bright green patchesGreen mould (Trichoderma)Remove the bag from the room; heavily affected bags are discarded
Black, yellow or pink spotsOther moulds or bacteriaDiscard; next time cleaner straw and hands
Sour, rotten smellStraw too wet, bacterial growthSqueeze straw drier next time
Tiny flies around bagsMushroom flies (sciarids)Fine net on windows, yellow sticky traps, remove old caps quickly
Yellow, dried capsAir too dry or caps left too longRaise humidity, pick earlier

A bag with only a small green spot sometimes still gives one flush. Keep it separate and watch it.

Before you try it

Oyster mushrooms release a lot of spores when fruiting in a closed room, and some people develop sneezing, cough or breathing trouble from them: grow in a ventilated space, not a bedroom, and pick before caps fully flatten. Anyone with asthma should be especially careful. Throw away any bag with heavy coloured mould and never eat mushrooms you are unsure of. Never mix wild mushrooms into your harvest. If someone feels unwell after eating mushrooms, with vomiting, diarrhoea or abdominal pain, get medical help promptly and keep a sample.

Grow it or skip it?

Grow it if you have a spare, shaded room or store and reliable spawn; it is one of the few crops a flat dweller can grow in quantity in winter. Skip it if your only space is a bedroom, or if you can’t get spawn from a trusted source. Pot and soil skills don’t transfer, so the usual potting mix and beginner crops are separate projects. Oyster mushroom growing questions

How do you grow oyster mushrooms at home?

Mix oyster spawn into pasteurised, damp wheat straw in a perforated polythene bag, keep it dark and warm for 2 to 3 weeks, then move it to a cool, humid, lit spot to fruit.

Where can I buy oyster mushroom spawn in Pakistan?

Ask agricultural university mushroom labs, provincial agriculture research institutes and established mushroom growers. Buy fresh, fully white spawn with no green or black spots.

How many days does oyster mushroom take to grow?

Roughly 3 to 5 weeks from bagging to the first harvest: about 2 to 3 weeks of spawn run, then a week or so to fruit.

When is the best time to grow dhingri in Pakistan?

October to March in the plains, when rooms stay between about 15C and 25C. Spring and autumn in the hills.

Can I grow oyster mushrooms in a bucket or pot?

Yes, a bucket with holes drilled around the sides works like a bag. A plant pot with soil does not work; the fungus needs straw or similar plant waste.

Do I need to boil the straw?

No. Hot water at about 70C to 75C for one to two hours is the usual home pasteurisation. Boiling isn’t necessary.

Why is green mould growing on my mushroom bag?

Usually dirty straw, under heated straw, warm conditions or hands. Remove that bag from the growing room. Next time, check your water temperature and clean your workspace.

Is it safe to grow mushrooms in a bedroom?

It isn’t a good idea. Fruiting bags release spores that can irritate the airways. Use a ventilated store, garage or verandah.

Can oyster mushrooms be eaten raw?

They should be cooked. Cooking improves digestibility and taste.

Khumbi kaise ugaye?

Gandum ka bhoosa garam pani (taqreeban 70 se 75C) mein ek do ghante rakhein, thanda karke spawn ke saath polythene bag mein bharein, 2 se 3 hafte andhere mein rakhein, phir thandi nam jagah par khumbiyan nikal aati hain.
