How to Grow Bok Choy (Pak Choi) in Pots Without Bolting

Bok choy is a cool weather Chinese cabbage that rewards one decision above all: sowing it at the right time. Sow between October and December in the plains, in a pot at least 20 cm deep, and you can cut baby leaves in about a month and whole heads in roughly eight to ten weeks. Sow it in February, and it will most likely shoot up yellow flowers before you get a single proper head. That, in short, is how to grow bok choy in Pakistan and North India.

  • Sun: 4 to 6 hours; tolerates light shade
  • Germination: usually within a week
  • Harvest: baby leaves in about 30 days, full heads in about 45 to 75 days

Why does bok choy flower so fast?

Bok choy belongs to the same species as turnip and sarson. Like them, it is programmed to flower when it senses stress: heat, dry soil, lengthening days, or even a sharp cold snap after it has grown a bit. Once the flower stalk rises, leaves turn tough and bitter. Everything about growing it well is about avoiding those triggers, which in our climate means a sowing window that is narrow but generous: autumn into early winter.

If you already know how to cook it, our desi kitchen guide to bok choy covers that. Here we stay with the pot.

When should you sow bok choy where you live?

Multan, Sukkur, BahawalpurLate October to early DecemberFebruary onward
Lahore, Faisalabad, DelhiOctober to DecemberFebruary onward
Islamabad, PeshawarLate September to NovemberApril to August

The February trap

Seed shops sell bok choy seed all winter, and a February sowing in Lahore looks healthy for three weeks. Then the days lengthen and temperatures climb, and it bolts. If you missed December, choose a “bolt resistant” variety and harvest everything as baby leaves at four weeks rather than waiting for heads.

How do you sow bok choy in pots?

  1. Fill a pot or grow bag at least 20 cm deep with 2 parts soil, 1 part compost and 1 part cocopeat (see potting mix ratios).
  2. Sow seeds about 1 to 2 cm deep, two or three per spot.
  3. Space spots 8 to 10 cm apart for baby leaves, or 20 to 25 cm for full heads.
  4. Water gently and keep moist; seedlings appear in about 4 to 7 days.
  5. Thin to the strongest seedling per spot. Eat the thinnings.
  6. Or raise seedlings in a tray and move them at 3 to 4 true leaves, ideally on a cloudy day; the seed starting guide covers transplanting. Water well after.

Direct sowing is simpler and avoids transplant shock, which itself can push early flowering.

How do you care for it until harvest?

  • Water: keep the soil evenly moist. In winter that is every 2 to 3 days in a pot; in a warm spell, daily. Dry soil is the most common cause of early bolting.
  • Feed: it is a leafy crop and likes nitrogen. Mix compost in before sowing, and two to three weeks after germination add a liquid feed with nitrogen as the first and largest number, at half label strength, every two weeks.
  • Sun: 4 to 6 hours. On a Karachi balcony, morning sun is plenty.
  • Frost nights: mature bok choy handles light frost. Young seedlings on a Lahore or Islamabad roof should be covered with cloth on the coldest nights.
  • Mulch: a thin layer of dry leaves or straw keeps moisture steady.

When and how do you harvest bok choy?

Two ways:

  • Baby leaves, from about 30 days: snip outer leaves when 10 to 15 cm long. The centre keeps producing for several weeks.
  • Whole head, from about 45 to 75 days: when the plant is compact and firm and the stems are thick and white or pale green, cut through the base with a sharp knife.

If you see a central stalk with buds forming, harvest the whole plant immediately. The flower stems and unopened buds are tender and good in stir fry.

Common problems and first responses

ProblemSignFirst response
Flea beetlesTiny shot holes in young leavesMostly cosmetic; fine netting over seedlings
AphidsClusters under leaves, curlingStrong water spray, then insecticidal soap
Cabbage caterpillarsLarge ragged holes, green droppingsHand pick daily, check leaf undersides for eggs
Slugs, snailsSlime trails, chewed leaves (Karachi, monsoon gardens)Hand pick at night
BoltingCentral stalk, yellow budsHarvest now; sow earlier next year

Why are bok choy leaves turning yellow?

Lower leaves yellowing one by one as the plant grows is normal. If many leaves yellow at once, check for waterlogged soil first, then hunger: bok choy is a quick, hungry crop, and a pot without compost runs out of nitrogen. A feed usually greens new growth within a week or two. Yellowing with a rising stalk means it is bolting.

Take care if

Hand picking and water sprays come first. If you use any other pesticide, it must be labelled for leafy food crops; read the waiting period before harvest, wear gloves and a mask, and keep children and pets away until it dries. Wash leaves well between the stems, where soil and insects hide. Bok choy is a normal vegetable, and people on blood thinners such as warfarin are usually advised to keep their leafy green intake steady; if you plan to eat it daily, mention it to your doctor.

Grow it or skip it?

Grow it, from October to December. It is fast, compact, and one of the best winter pot crops for a small balcony. Skip it in the plains from February to September unless you are happy with baby leaves only. Grow it in pots or a bed equally; one 10 litre bag holds two full heads or a dozen baby plants. If you are just beginning, start with the first five beginner plants and add bok choy the following winter. More in Kitchen Garden.

Bok choy growing questions

How do you grow bok choy at home?

Sow seeds 1 to 2 cm deep in a pot at least 20 cm deep between October and December, keep the soil moist, give 4 to 6 hours of sun and feed with compost. Harvest baby leaves from a month.

When should I sow bok choy in Pakistan?

October to December in Lahore, Multan and Delhi, November to January in Karachi, and late September to November in Islamabad.

How many days does bok choy take to grow?

About 30 days for baby leaves and 45 to 75 days for full heads, depending on variety and temperature.

How long do bok choy seeds take to germinate?

Usually 4 to 7 days in cool weather. Very cold soil in January slows germination.

Why is my bok choy flowering?

Heat, dry soil, lengthening days or a sudden cold shock triggered bolting. Harvest it now and sow earlier and keep the soil evenly moist next time.

Can bok choy grow in shade?

It tolerates light shade and even prefers afternoon shade on warm days. Under 3 hours of sun it grows leggy and pale.

Does bok choy grow back after cutting?

If you cut the head about 3 cm above the base, a few small leaves often regrow. Picking outer leaves gives a longer harvest.

What are the small holes in my bok choy leaves?

Flea beetles. The damage is mostly cosmetic on older plants. Cover young seedlings with fine net.

Pak choi kaise ugaye?

October se December tak gamle mein beej 1 se 2 cm gehra boyein, mitti nam rakhein aur 4 se 6 ghante dhoop dein. Ek mahine baad chhote patte, aur do mahine ke qareeb poora paudha kaat sakte hain.
