How to Grow Amaranth Greens (Chaulai) in Pots All Summer
Palak bolts and sulks once April turns hot. Chaulai doesn’t. Learning how to grow amaranth greens gives you a saag that loves 40°C, sprouts in days, and is ready to cut in about a month from a shallow tray on the roof.
Red chaulai, green chaulai, lal saag, cholai: they are all leafy amaranths, the summer answer to winter greens. The seed is tiny, the effort is small, and a few pots sown two weeks apart keep a family in saag from March to September. For cooking it alongside kulfa, see the chaulai and kulfa saag guide; this page is only about growing it.
Before you start
- Sow: March to August on the plains; February to October in Karachi; May to July in the hills.
- Container: a wide 8 to 10 litre tub (about 6 to 8 inches deep) or a vegetable grow bag.
- Sun: 5 to 8 hours; afternoon shade helps in Multan heat.
- Seed depth: barely covered, half a centimetre or less.
- Germination: often 3 to 6 days in warm soil.
- First cutting: around 3 to 6 weeks after sowing.

When can you sow chaulai in Pakistan?
Whenever nights stay above about 15°C. In Lahore, Faisalabad and Delhi that means mid March onward; in Multan, Sukkur and Bahawalpur, early March, then again after the worst of June. Monsoon sowings in July grow fast but need drainage, because chaulai seedlings rot in soggy pots. Islamabad and Peshawar can start in April. Karachi can sow almost year round except the coolest weeks. Frost or a cold snap kills it, so the season on the plains ends by October.
How do you sow amaranth seeds so they actually come up?
The seed is as small as rai, which is where people go wrong: they bury it too deep or sow far too thickly.
- Fill the tub with a light mix: two parts soil, one part compost, one part cocopeat (more on ratios in the potting mix guide). Water it well first.
- Mix one pinch of seed (about a quarter teaspoon) with two spoons of dry sand so you can scatter it evenly over a 12 inch tub.
- Sprinkle the sand and seed mix, then dust a thin layer of dry compost on top. Press lightly with your palm.
- Mist with a spray bottle or a fine rose. A jet of water washes the seed into one corner.
- Keep the surface damp until sprouts appear. On a 42°C roof, cover with a sheet of newspaper for the first two days and remove it the moment you see green.
- At two weeks, thin to a seedling every 5 cm and eat the thinnings as microgreens. For a single big plant, thin later to one every 15 cm.
The ten centimetre cut
Do not uproot the whole plant. When stems are about 20 to 25 cm tall, cut them about 10 cm above the soil, just above a pair of leaves. New shoots grow from those leaf joints, and you usually get two or three more cuttings before the plant tires. Sow a fresh tub every two to three weeks so one is always ready.
How often should you water chaulai?
Shallow tubs dry out fast. In April to June expect daily watering, early morning, and a second light watering on 45°C days if leaves droop by afternoon. In the monsoon, only when the top inch is dry. Chaulai copes with dry spells better than palak, but stressed plants go to flower quickly and the leaves turn tough and bitter.
What fertiliser does amaranth need?
Leaves are the crop, so this is the one plant here that likes nitrogen. Compost mixed in at sowing covers the first cutting. After each cut, scatter a handful of compost or vermicompost on the surface and water it in. If you use a bagged feed, a balanced or nitrogen leaning one at half the label rate every two weeks is enough. More is not better: leafy greens can store excess nitrate when overfed, so keep feeding modest.
Why are my amaranth leaves turning yellow?
| What you see | Likely cause | First step |
|---|---|---|
| Lower leaves yellow, soil wet | Poor drainage | Water less, open drain holes |
| All leaves pale after several cuts | Hungry soil | Top dress compost |
| Fine yellow speckles, webbing | Spider mites | Hose leaf undersides |
| Holes and lacy leaves | Caterpillars, beetles | Pick off by hand at dusk |
Caterpillars (leaf webbers that fold leaves together) are the main pest. Unroll and squash. Aphids gather under leaves in dry heat; a water spray handles them. For mites, the spider mite guide has the full routine. Since you eat the leaves within days, stay with water sprays, hand picking and neem; anything stronger must have its waiting period respected.
Red or green chaulai: which should you grow?
Both grow the same way. Red types colour the cooking water and look lovely mixed in a tub; green types often have softer, bigger leaves. If one goes bitter fast in your heat, try the other next sowing. Grain amaranth (rajgira) is a different crop, grown for seed, and needs a long season and a lot more space.
When should you harvest amaranth greens?
Start cutting when plants are knee to calf high and leaves are soft enough to tear easily, usually 3 to 6 weeks after sowing. Pick before the plant sends up its tassel of flowers. Once it flowers, leaves shrink and toughen. Harvest in the cool morning, keep the stems in a jug of water or wrap in a damp cloth in the fridge, and cook within two days.
Wild pigweed amaranths look similar and grow as weeds on roadsides and drains, where they can soak up runoff and sprays. Eat only what you sowed in clean soil. Leafy amaranth is naturally high in oxalate; people told to limit oxalate for kidney stones should ask their doctor how often to eat it. Keep pesticide bottles and treated pots away from children and pets.
Grow it or skip it?
Grow it. For a beginner it ranks with methi as a quick win, it covers the summer gap when nothing else leafy will grow, and failures cost a pinch of seed. Pots on a roof get heavy once watered, so put larger tubs near walls, not in the middle of an old slab. For more first crops, see five easy plants for beginners.
Amaranth greens: what people ask
How many days does chaulai take to grow?
Usually 3 to 6 weeks from sowing to the first cut in warm weather. Monsoon sowings are fastest; early March sowings take longer.
How long do amaranth seeds take to germinate?
Often 3 to 6 days in warm soil. Nothing after 10 days usually means the seed was buried too deep or washed away.
Can I grow chaulai in a small pot?
Yes, a wide 8 to 10 litre tub works well for a cut and come again crop. Width matters more than depth.
Will chaulai grow back after cutting?
Yes, if you cut above a pair of leaves about 10 cm from the soil. Most plants give two or three more cuttings.
Why is my amaranth flowering so early?
Heat stress, a dry pot or a cramped tub push it to flower. Water steadily and cut regularly to delay it.
Can I sow amaranth in winter?
Not on the plains; cold stops it and frost kills it. Karachi can manage a mild winter sowing.
Can I use seeds from the market saag?
Only if the plants were left to seed, which market bunches rarely are. Buy a packet; it is cheap and germinates reliably.
Is the wild amaranth weed safe to eat?
Do not pick roadside or drain side plants. They may carry sprays and dirty runoff, and lookalike weeds can be confused with it.
Chaulai kaise ugaye gamle mein?
March se August tak chauray gamle mein beej ret ke saath milakar chhirkein, upar halka sa compost, aur spray se paani. Ek mahine mein 10 cm upar se kaat lein, phir dobara ugega.
