Oats Chilla, Oats Roti and Upma: Savoury Desi Oats (Jai) Recipes

Half a cup of oat flour, two spoons of besan and a little dahi make three soft oats chillas in about 15 minutes, and that is the easiest way into savoury oats for anyone who can’t face sweet porridge. Below are five desi recipes (oats chilla, oats roti, oats upma, oats khichdi and oats tikki), with food amounts, calories per serving and simple protein add-ons.

How to make oat flour at home

Put plain rolled oats in a dry grinder jar and pulse for 30 to 60 seconds until they look like coarse atta. A cup of rolled oats (about 90 g) gives a little under a cup of flour, because the flakes settle once broken. Grind only a week or two’s worth at a time and keep it in an airtight jar. Ground oats go stale faster than whole flakes; if the flour smells bitter or like old paint, throw it out.

How to make oats chilla

This is the recipe most people search for, and it’s forgiving. Serves 1 (three chillas, about 15 cm across).

  1. Mix half a cup of oat flour (about 45 g), 2 tablespoons of besan or fine sooji, and a third of a cup of dahi.
  2. Add water a spoon at a time, about a third of a cup in total, until the batter pours like thick pakora batter.
  3. Stir in 2 tablespoons each of finely chopped onion and tomato, 1 green chilli, a little dhania, a pinch of haldi, jeera and salt.
  4. Rest the batter for 10 minutes. The oats drink water and the chilla holds together better.
  5. Heat a tawa on medium, rub it with a quarter teaspoon of oil, and spread a ladle of batter thin.
  6. Cook 2 minutes, drizzle a few drops of oil around the edge, flip and cook 1 to 2 minutes more.

All three chillas with a teaspoon of oil come to roughly 300 to 350 kcal and about 12 g protein. Grate 30 g paneer into the batter for about 6 g more protein and 80 extra kcal, or crack one egg into the batter for an anda-oats chilla that holds together even better.

If your chilla sticks

The tawa is either too cold or too dry. Heat it until a sprinkle of water sizzles away, wipe on oil with a cut onion half, then pour. And don’t flip before the top looks dry at the edges.

How to make oats roti (and why pure oats roti breaks)

Oats have no gluten, the stretchy protein in wheat that lets a roti roll thin and puff. So pure oats dough cracks at the edges and tears when you lift it. The fix is simple: mix it with wheat atta.

  1. Mix 1 cup of wheat atta (about 120 g) with half a cup of oat flour (about 45 g) and a pinch of salt.
  2. Knead with warm water, about half a cup, added slowly, into a dough slightly softer than normal roti dough.
  3. Cover and rest for 15 to 20 minutes. Oat flour keeps absorbing water, so add a few drops if it stiffens.
  4. Divide into 6 balls, roll with plenty of dry atta, and cook on a hot tawa as you would a normal roti.

Each roti is roughly 90 to 110 kcal, about the same as a plain chapati of the same size. Oats don’t make it lighter; they add a little more soluble fibre and a nutty taste. You can go up to half oats and half atta, but the dough gets harder to roll after that. Gluten-free pure oats roti is possible if you knead with very hot water and pat it by hand like makki ki roti, but it stays thick and fragile.

Oats upma, oats khichdi and oats tikki

Oats upma (serves 2)

  1. Dry-roast 1 cup of rolled oats (about 90 g) in a kadhai for 3 to 4 minutes until they smell toasty. Tip them out.
  2. Heat 2 teaspoons of oil. Add half a teaspoon of rai, 1 teaspoon of chana daal, a few curry leaves and 1 green chilli.
  3. Add 1 small chopped onion, then 1 cup of mixed vegetables (carrot, peas, beans, capsicum). Cook 4 to 5 minutes with salt and haldi.
  4. Add three-quarters of a cup of water, bring to a boil, then stir in the oats. Cover and cook on low for 2 to 3 minutes.
  5. Finish with lemon and dhania. Serve at once; it thickens as it sits.

Each plate is roughly 250 to 300 kcal with about 7 g protein. A katori of dahi on the side, or a tablespoon of roasted peanuts in the tadka, lifts the protein. If you already make sooji upma, the method is almost the same (see our sooji upma guide); oats just need less water and less time.

Oats khichdi (serves 2)

Soak a quarter cup of dhuli moong daal for 30 minutes. In a pressure cooker, heat 1 teaspoon of ghee with jeera and a pinch of hing, add the drained daal, half a cup of rolled oats, half a cup of chopped vegetables, haldi, salt and 3 cups of water. Cook for 2 whistles and let the pressure drop on its own. Each bowl is roughly 200 to 250 kcal and about 9 g protein, because the daal does much of the protein work. It’s soft, mild, and good on a day you feel unwell.

Oats tikki (makes 8)

Mash 2 medium boiled potatoes with half a cup of rolled oats pulsed coarse, half a cup of grated carrot or cabbage, green chilli, dhania, chaat masala and salt. Shape into 8 flat tikkis and cook on a tawa with 2 teaspoons of oil, 3 to 4 minutes a side. Each is roughly 60 to 70 kcal. Mashed boiled chana or crumbled paneer in the mix turns them into a better snack.

Home recipes vary with the size of the ladle and how much oil lands in the pan, so treat these as ranges, not labels.

Are oats good for weight loss? The honest answer

Oats are one good breakfast option, not a magic food. They’re filling for their calories because the soluble fibre (beta-glucan) thickens in the stomach, and a savoury oats plate with vegetables and dahi keeps many people full until lunch. But oats don’t make fat disappear, and a chilla fried in two tablespoons of oil stops being light.

What changes weight is the whole day’s intake. Real, lasting loss is about 0.5 to 1 kg a week after the first week or two, when early drops are mostly water. Women shouldn’t go below about 1,200 kcal a day, or men below about 1,500, without medical supervision. For South Asians, health risk starts rising at a BMI of about 23, and a waist above roughly 90 cm in men or 80 cm in women is worth taking seriously. Did you know? Across Pakistan and north India, jai has mostly been grown as green fodder for cattle. Oats as a breakfast grain for people is a fairly recent city habit, borrowed from Scotland and northern Europe, where oatcakes and porridge go back centuries.

Take care if

You use insulin or sugar-lowering pills: eating less at breakfast can bring on a hypo (shaky, sweaty, confused), so talk to your doctor before cutting portions. Have kidney disease: ask before adding daal-heavy or high-potassium meals. Have coeliac disease: use only gluten-free oats, and skip the atta and sooji versions. Are pregnant or breastfeeding: eat well rather than diet. Teenagers and children shouldn’t count calories; family meals like these are fine as they are. Chest pain, fainting or unexplained weight loss needs a doctor, not a recipe.

Savoury oats questions, answered

How do I make oats chilla without besan?

Use 2 tablespoons of fine sooji, or one egg, in place of besan. Rest the batter 10 minutes either way. The chilla is a little more fragile without besan, so keep it smaller and flip it gently.

Why does my oats roti break?

Oats have no gluten, so the dough can’t stretch. Mix oat flour with wheat atta, up to about half and half, use warm water and rest the dough 15 minutes. For a pure oats roti, knead with very hot water and pat by hand.

Can I eat oats chilla for weight loss?

Yes, three oats chillas cooked with a teaspoon of oil make a filling breakfast of roughly 300 to 350 kcal. It helps only if it replaces something heavier. Weight loss still comes from the whole day’s food, not one dish.

Is oats good for diabetes?

Savoury dishes made with plain oats can suit people with diabetes, especially when eaten with vegetables and protein like dahi or egg. Keep the portion measured and check your sugar 2 hours after eating. Never change your medicines without your doctor.

Can I use masala oats packets for these recipes?

You can, but they carry a lot of salt and flavouring, and you lose control of what goes in. Plain rolled oats with your own spices taste fresher and cost less per serving.

Can I make oats chilla batter the night before?

Yes, keep it covered in the fridge and use it within a day. It thickens overnight, so stir in a spoon or two of water. Add the onion and tomato in the morning so the batter doesn’t turn watery.

How do I add more protein to oats recipes?

Stir grated paneer or an egg into chilla batter, cook moong daal with oats as khichdi, or serve any of these with a katori of dahi. Plain oats alone give only about 5 g protein per 40 g.

Is oats upma healthier than sooji upma?

Oats upma has more fibre and is whole grain, while sooji is refined wheat. Calories are similar for the same plate. Both depend mostly on how much oil and how many vegetables go in.

Can children eat oats chilla?

Yes, oats chilla is a good family breakfast for children. Keep it soft, go easy on chilli and salt, and cut it into strips for toddlers. For babies under 1, add no salt at all.

How long does homemade oat flour last?

Ground oats go stale faster than whole flakes, so grind only a week or two’s worth. Keep it airtight and dry, and smell it before use. Bitter or paint-like means rancid.

Can I bake or air-fry oats tikki?

Yes. Brush with a teaspoon of oil and air-fry at about 180 °C for 12 to 15 minutes, turning once. Baking in an oven at 200 °C takes about 20 minutes. They’ll be a little drier than tawa tikkis.
