Rice Water Ratio for Every Rice, Pot and Pressure Cooker

For most white rice the water ratio is 1 cup rice to 1.5 cups water in a pressure cooker and 1 to 2 in an open pot, while brown and red rice need about 1 to 2.5. The full table below covers every common type, with minutes and whistles, plus the fixes for sticky and hard rice.

The short version

  • Use one cup for both rice and water: the ratio is by volume, so any cup works if you reuse it
  • Rinse until the water is mostly clear for separate grains
  • Rest 10 minutes with the lid on before opening
  • Yield: 1 cup raw makes about 3 cups cooked, roughly 4 to 5 katoris

What is the water ratio for each type of rice?

These are tested starting points. Rice varies by age, brand and how much you rinse, so treat the first batch as a calibration and note what you changed.

For basmati, the soaking time and ratio live in the basmati soaking guide, so this page does not repeat them.

How to cook rice in an open pot

  1. Rinse the rice in two or three changes of water until the water turns mostly clear.
  2. Combine rice and water in a heavy pot using the ratio above.
  3. Bring to a boil on high heat, uncovered, then drop to the lowest flame and cover tightly.
  4. Cook for the time in the table. Do not lift the lid.
  5. Switch off and rest 10 minutes, covered. Fluff with a fork, never a spoon pressed flat.

How many whistles for rice in a pressure cooker?

White rice needs only 2 whistles on a medium flame, or 1 whistle then 5 minutes on low. Parboiled takes 3. Brown and red need 5 to 6 because the bran slows water. After the last whistle, switch off and let the pressure drop on its own for about 10 minutes. Releasing steam by force makes the grains split and the top layer wet.

Cookers differ. A 3 litre cooker with a small amount of rice may need fewer whistles than a 5 litre one, so adjust by one whistle at a time.

Does brown rice really need that much more water and time?

Yes. The outer bran layer slows absorption. Soaking brown or red rice for 30 minutes cuts the cooking time by a few minutes and often gives a softer bite. NHS guidance notes that wholegrain choices like brown rice usually contain more fibre than white. For the diabetes and weight side of that choice, read brown rice vs white rice. For the darker varieties and how to cook them, see red and black rice.

The rescue kit

Mushy rice: spread it on a wide plate for 5 to 10 minutes so steam escapes, and use it for fried rice or kheer. Hard rice: sprinkle 2 spoons of hot water, cover tightly and leave on the lowest flame or a tawa for 10 minutes (dum). Rice stuck to the bottom: switch off, put a damp cloth under the pot for 5 minutes, then scoop from the top.

Why does my rice turn sticky or mushy?

  • Too much water: trim by 2 tablespoons per cup next time.
  • Not enough rinsing: loose surface starch glues the grains.
  • Stirring while it cooks: this releases more starch.
  • Old pot lid that leaks steam: the rice cooks unevenly.
  • Short grain or sticky varieties: they cling by nature, so use less water.

Why is my rice hard in the middle?

Usually too little water, too short a time or a lid that let steam out. Add a few spoons of hot water, cover and give it a 10 minute dum. If the grain was old or soaked too little, a longer soak next time helps.

How much does one cup of rice make?

One cup raw becomes about 3 cups cooked, which is around 4 to 5 katoris of 150 ml. A family of four eating one katori each plus seconds needs about 1.5 cups raw. If you plan a month of rice, the monthly ration planner adds this up.

The old way

Before cookers, many homes boiled rice in plenty of water and drained the extra, called “ganji” or starch water, keeping it as a drink. The method gives separate grains but washes away some starch and soluble nutrients. If arsenic worries you, the draining question has its own page: rice arsenic and draining.

Resting time: does it matter?

Yes. A 10 minute rest lets moisture redistribute, so the top grains are not wetter than the bottom. Skipping it is a common reason for uneven rice.

Take care with leftovers

Cooked rice should not sit out for hours. Cool it quickly, refrigerate it and reheat until steaming hot all the way through. NHS food poisoning guidance warns that food can make you ill when it is left out too long or not chilled. See a doctor if vomiting or diarrhoea lasts more than a couple of days, if there is blood, or if a child, older adult or pregnant person has signs of dehydration.

Frequently asked questions about cooking rice

What is the rice water ratio?

For white long grain it is 1 cup rice to 2 cups water in an open pot and 1 to 1.5 in a pressure cooker. Brown and red rice need roughly 1 to 2.25 to 2.5. Adjust slightly to your rice.

How much water for 1 cup rice?

Between 1.5 and 2.5 cups depending on type and method. White rice in a cooker takes 1.5 cups. Brown rice in an open pot takes 2.5.

How many whistles for rice in a pressure cooker?

Two for white, three for parboiled and five to six for brown or red. Let the pressure fall naturally afterward for a better texture.

What is the brown rice water ratio?

Use about 1 cup rice to 2.25 cups water in a cooker and 2.5 in an open pot. Soak for 30 minutes for a softer result.

Why does rice become sticky?

Usually extra water, too little rinsing or stirring while cooking. Rinse until mostly clear, measure water and keep the lid closed.

What is the rice cooker water ratio?

Many white rice cookers work with 1 cup rice to about 1.25 to 1.5 cups of water. Your cooker’s manual and the lines inside the pot are the best guide.

1 cup rice makes how many katori?

About 4 to 5 katoris of cooked rice, because rice roughly triples when cooked. Katori sizes differ, so a quick test with your own bowl helps.

Should I soak rice before cooking?

Brown, red and parboiled rice benefit from 30 minutes. Ordinary white rice does not need it. Soaking shortens cooking and can reduce breakage.

How do I fix mushy rice?

Spread it on a plate to let steam escape, then use it in fried rice or kheer. Draining and rinsing does not help much after cooking.

How do I fix hard or undercooked rice?

Add 2 spoons of hot water, cover tightly and cook on low heat or let it steam for 10 minutes. Fluff before serving.

Is it safe to reheat rice?

Yes, if it was cooled quickly and refrigerated. Reheat until steaming hot throughout and do it once. Do not leave cooked rice at room temperature for hours.
