Broken Rice (Tukra) vs Full-Grain Basmati: Which to Buy

Broken rice, or tukra, is simply rice grains that snapped during milling, and it is not fake or unsafe. It cooks faster and softer, costs less and suits khichdi, kheer and kids’ pulao. It is the wrong pick for biryani, where long unbroken grains are the point.

Tukra at a glance

  • What it is: broken pieces of the same rice, from basmati or other varieties
  • Cooks: softer and quicker than whole grain, with less water and less time
  • Best for: khichdi, kheer, soft pulao, congee-style rice, idli batter
  • Avoid for: biryani, dum rice, anything that needs separate long grains
  • Soak: only 10 minutes

What is tukra basmati and why is it cheaper?

When rice is milled and polished, some grains crack or break. Whole grains go into the premium bag. The fragments are sieved out and sold as tukra, “tukri” or broken basmati. The cheaper price reflects shorter grains and a different use, not a different crop.

That does not make every bag honest. A bag sold as “basmati tukra” should contain broken basmati and not a cheaper rice. We cover that mixing question in basmati adulteration checks.

Is broken rice good or bad?

Neither. Broken pieces are the same grain, so a bag of broken rice is nutritionally close to whole grain of the same type and polish. Two honest differences: it cooks softer, and it breaks down more, so it can go pasty if you stir or overcook it. For the full breakdown of processing, see sella, steam and kacha basmati, where the processing method matters far more than the grain length.

How does broken rice cook differently?

The pieces are small, so water gets in quickly. That changes three things:

  • Soaking: 10 minutes is enough. Longer soaking makes it mushy.
  • Water: use about 1 cup rice to 1.5 to 2 cups water for a soft rice, and 2.5 to 3 for a porridge-style khichdi.
  • Time: 10 to 12 minutes in an open pot, or 1 whistle in a pressure cooker.

The 10 minute soak rule

Rinse tukra once or twice gently, soak for exactly 10 minutes, drain, then cook with the lid on and no stirring. If you stir during cooking, the broken starch turns it into paste. For a firmer pulao, fry the drained rice for a minute in a little ghee before adding water.

What is tukra good for?

  1. Khichdi: cooks together with daal into a soft meal. See the moong daal khichdi proportions.
  2. Kheer and sweet rice: breaks down creamily, which is what you want.
  3. Kids’ pulao: small pieces are easy to chew and spoon-friendly.
  4. Congee or soft rice for older adults: tender with extra water.
  5. Idli and dosa batter: some homes use tukra to save cost.

When should you avoid it?

Biryani, zarda, dum pulao and any dish served as separate, long, fluffy grains. Tukra turns sticky in these, and no technique fully fixes that. If your goal is a restaurant look, buy long grain. For the types and grades, our Pakistani rice varieties guide explains Super Kernel, 1121 and Kainat.

How to check broken percentage when buying

Some packs state a maximum percentage of broken grain on the label or in the trade grade. If it is printed, use it. If not, do the eyeball test: pour a handful on a white plate and count roughly. A bag sold as whole grain with many small pieces is poor value. A bag sold as tukra with many whole grains is fine.

  • Look for even colour and no dust at the bottom of the bag.
  • Smell it. Musty or sour means old or damp stock.
  • Avoid bags with tiny holes or webbing, which suggest weevils.
  • Check that the label says what the grain is. “Basmati” on the front with a different rice inside is a labelling problem.
What elders did

Tukra was the everyday rice in many homes, kept for daily khichdi and sweet dishes, while whole-grain basmati was saved for guests and Eid. That split still makes sense: the right grain for the right dish.

Storing tukra

Broken grains have more cut surface, so they take up moisture and attract weevils a little faster than whole rice. Keep it in a dry airtight tin, buy for one or two months and shake the container once a week to check for clumping. Use tukra before the whole-grain bag, not after, since it ages sooner. The same storage rules in the weevil proof storage guide apply.

Mixed pieces: is that a problem?

Basmati tukra mixed with another broken rice is hard to spot and affects flavour, not safety. If a cheap bag smells like ordinary rice rather than fragrant basmati, that is your clue. Cooking a small test batch before buying 10 kg is cheap insurance.

Worth knowing first

Broken rice is a food, not a health product, and people with diabetes or other conditions should follow their own dietary plan whatever the grain size. Throw away rice that smells musty or looks damp. Cooked rice should be cooled and refrigerated promptly, not left on the counter. See a doctor if vomiting or diarrhoea lasts more than a couple of days or a child shows dehydration signs.

Frequently asked questions about broken rice

What is tukra basmati?

It is basmati rice that broke during milling, sold at a lower price. It is the same grain in smaller pieces and cooks faster and softer than whole kernels.

Is broken rice good or bad for you?

It is neither good nor bad on its own. It is the same rice in fragments, so the type and polish matter more than the grain length.

What is tukra chawal used for?

Khichdi, kheer, soft pulao, congee and batters. It is poor for biryani or any dish needing separate long grains.

Is broken basmati the same as full basmati?

It comes from the same crop, but the full grain is graded higher and costs more. The fragments cook differently and do not look as elegant on a plate.

What is a rice broken percentage?

It is the share of broken grains in a bag. Lower is better for whole-grain rice. If the label does not state it, check by eye on a white plate.

Is tukra rice good for khichdi?

Yes, it is one of its best uses. It breaks down with daal into a soft, spoonable meal and cooks in about 10 to 12 minutes.

How long should I soak broken rice?

About 10 minutes. Longer makes it absorb too much water and turn pasty.

How much water for broken rice?

About 1.5 to 2 cups per cup for soft rice. For khichdi or porridge, use 2.5 to 3 cups per cup.

Is tukra safe for kids?

Yes, as a normal cooked rice. It is easy to chew and swallow. Always serve it fully cooked and warm, not left out.
