Basmati Rice: Soaking Time, Water Ratio and Storing Cooked Rice
Leftover rice is one of the more common causes of food poisoning in hot kitchens, and it has nothing to do with how clean your pot was. So this basmati rice guide starts with choosing and cooking it well, then ends with the part most families get wrong: how to cool and store cooked chawal.

Choosing basmati: why “purana chawal” costs more
Ask any biryani cook in Lahore and they’ll tell you new-crop rice breaks and goes sticky. They’re right. Freshly harvested basmati has more moisture and its starch hasn’t settled, so the grains swell unevenly and burst; rice aged for a year or more (sold as old, aged, or “purana”) cooks longer, drier and more separate. That’s what you want for biryani, pulao and plain boiled chawal.
- Look: long, slim, translucent grains with pointed ends. Few broken pieces.
- Colour: aged rice has a faint creamy tint; new rice is chalky white.
- Smell: rub a handful between your palms. Good basmati smells faintly of popcorn or pandan.
- Watch out for: lots of chalky, opaque grains, dust, tiny insects, or a musty smell.
- Sella basmati is parboiled before milling. It’s yellowish, very forgiving and stays separate, which is why many caterers use it for large pots.
Cheap “basmati” is sometimes blended with other long-grain rice, and the only home clue is inconsistent cooking: some grains long and fluffy, others mushy.
Washing and soaking times
- Put the rice in a large bowl and cover generously with water. Swirl gently with your fingers, don’t rub hard or you break grains.
- Drain and repeat 3 to 5 times until the water is only slightly cloudy; this removes loose starch and dust, which is what causes stickiness.
- Soak in fresh water. Aged basmati: 30 minutes. Very old, hard rice: up to 45 minutes. New-crop rice: 15 to 20 minutes. Sella: 1 to 2 hours.
- Drain in a colander for 5 minutes before cooking.
Longer isn’t better. Rice soaked for hours absorbs so much water that it breaks as soon as it boils.

Boil and drain (safest for beginners)
- Bring 2 litres water to a rolling boil for 1 1/2 cups soaked rice. Add 1 tablespoon salt, 1 tez patta, 2 choti elaichi and a few drops of lemon juice.
- Add the drained rice and stir once, gently.
- Boil uncovered on high for 8 to 10 minutes. Test a grain: it should be tender with no hard white core.
- Drain in a colander and let it steam 2 minutes. Fluff with a fork.
Dum for biryani
- Boil soaked rice in heavily salted water (it should taste like mild sea water) for 5 to 6 minutes, until a grain breaks into 3 pieces when pressed but still has a slightly firm centre. That’s about 70% cooked.
- Drain immediately. Layer over the cooked meat masala.
- Sprinkle zafran milk, fried onions, pudina and 2 tablespoons ghee on top.
- Seal the lid with a strip of atta dough or foil, and put the pot on a tawa over the lowest flame for 15 to 20 minutes.
- Rest 5 minutes off the heat before opening, then mix from the side with a flat plate, not a spoon.

Storing cooked rice safely
Raw rice can carry spores of a bacterium called Bacillus cereus. Cooking doesn’t kill the spores. When cooked rice sits warm for hours, they grow and make a toxin that reheating cannot destroy. It can cause sudden vomiting within a few hours, or diarrhoea later. This is why rice left on the stove from lunch until dinner in summer is a genuine risk, even if it smells fine. Babies, young children, pregnant women, older people and anyone with a weak immune system are hit harder. Seek medical help for vomiting that won’t stop, signs of dehydration (very little urine, dry mouth, drowsiness), blood in stool, or any of this in a baby.
- Cool fast. Spread leftover rice in a wide, shallow tray or plate so the steam escapes. Aim to have it in the fridge within 1 hour of cooking, and don’t leave a covered deg to cool on the counter all afternoon.
- Refrigerate. Cover once it stops steaming and keep it at 5 °C or below.
- Eat within 24 hours. Cooked rice is not a three-day leftover. If in doubt, throw it out.
- Reheat once only, until it’s steaming hot all the way through. Don’t reheat the same rice twice. Take out only the portion you’ll eat.
- Freezing: cooled rice can be frozen in flat bags within the hour. Defrost in the fridge and reheat thoroughly once.
- Tiffins: pack rice cold from the fridge with an ice pack, or hot in a proper insulated box eaten within a couple of hours. Lukewarm for a whole school morning is the danger zone.
Leftover rice for fried rice is fine if it has been cooled and refrigerated this way, and the same fast-cool rule applies to khichdi and daal-chawal.
The smell test does not work for rice. The toxin has no smell.
Unani texts describe rice as cold and dry in temperament, which is why hakeems in that tradition suggested pairing it with warm foods: daal, meat, ghee, garam masala. Ayurveda treats well-cooked white basmati as light and easy to digest, and it’s a base of the recovery food khichdi. Many grandmothers also insisted rice be eaten “fresh from the pot” and not kept for the next day, a custom that happens to match modern food safety advice.
Rice, diabetes and portions
White basmati is a starchy food. People with diabetes needn’t give it up entirely, but a heaped plate of biryani is a large carbohydrate load. Keep a measured portion (your dietitian can tell you how much), fill half the plate with salad, raita and vegetables, and don’t pair rice with sweet drinks. Cooked, cooled and reheated rice is sometimes promoted as “resistant starch rice” that won’t affect sugar; the change is small and doesn’t make rice free to eat freely. Ask your doctor or diabetes educator what suits you, especially if you take insulin.
Storing raw rice
Raw basmati keeps well for a year or more in an airtight container in a dry place. Rice weevils (small dark beetles with a snout) show up in humid months. Put new rice in the freezer, sealed in a bag, for 3 to 4 days, then store it in a tin with a tight lid; sun-drying and a pouch of dried neem leaves are the old way; see neem for grain storage. Can I keep cooked rice overnight?
You can, provided it was spread out to cool and went into the fridge within about an hour of cooking. Eat it within 24 hours and reheat it only once, until it’s steaming hot right through.

Press a grain between your fingers: it should break into about 3 pieces and still have a slightly firm centre. That usually takes 5 to 6 minutes in well-salted boiling water. Drain straight away, because it finishes on dum.
