How to clean and dry watermelon seeds at home
The sticky pulp is the only annoying bit. Do it straight after cutting the fruit, before the pulp dries on.
- Collect the seeds in a bowl as you cut and eat the watermelon.
- Cover them with water and rub handfuls between your palms for a minute. The pulp loosens and floats.
- Pour off the cloudy water and repeat 3 or 4 times, until the water stays clear.
- Tip them into a sieve and give a last rinse under the tap. Pick out any white seeds and bits of flesh.
- Spread them in one layer on a clean cotton cloth or tray. They should not touch in heaps.
- Dry them for 1 to 2 days in an airy, shaded spot, or 6 to 8 hours in strong sun, stirring once or twice. Cover with a net against flies.
- Test: they should feel dry to the touch, not tacky, and rattle when you shake the tray.
Roast them within a day or two of drying. Seeds left half-dry and heaped in a bowl in humid weather can grow mould, and a musty smell or any fuzz means the whole batch goes in the bin, because moulds on seeds and nuts can make toxins (aflatoxins) that roasting doesn’t remove.
How to dry roast watermelon seeds with salt
This is how street vendors do it, scaled down to a kitchen kadai. For 1 cup of dried seeds:
- Heat a heavy kadai or tawa on medium-low. No oil.
- Add the seeds and keep stirring for 8 to 10 minutes. They’ll start to smell toasty and some will pop.
- Mix half a teaspoon of salt into 2 tablespoons of water and pour it over the seeds. It’ll sizzle loudly.
- Keep stirring until the water evaporates and a fine white film of salt dries on the shells, 2 to 3 minutes.
- Roast another 2 to 3 minutes until they’re crisp and the kernel inside tastes nutty. Crack one to check; it should be pale gold, not dark brown.
- Spread them on a plate to cool. They crisp up further as they cool.
For a masala version, add a pinch of lal mirch and chaat masala to the salt water. For plain unsalted seeds, skip the water entirely.

Honestly, no, unless you enjoy it as a slow family activity. Magaz is the shelled kernel, and each seed has to be cracked between the teeth or with fingernails, one at a time, which is why shop magaz costs what it does.
