Jowar Roti (Bhakri): Soft, No Cracking, Step by Step

Jowar roti cracks because jowar flour has no gluten to hold it together. The fix is hot water, a warm dough and a full minute of kneading with wet palms, then patting the roti out by hand instead of rolling.

Quick facts

  • Dough: 1 cup fresh jowar flour to about 3/4 cup near-boiling water, plus a pinch of salt.
  • Knead: while still warm, wet palms, about a minute.
  • Tawa: medium-high; cook the dry side first, then the wet side.
  • One roti (40 g flour): roughly 145 kcal and 3 to 4 g protein, before any ghee.
  • Gluten: jowar itself has none, but check the mill and the pack.

How do I make jowar roti that does not crack?

Wheat dough stays together because gluten forms a stretchy net. Jowar has no such net, so you build a substitute: scald part of the starch with hot water so it turns sticky and glue-like. That is why every good bhakri recipe, from Maharashtra to Karnataka, starts with hot water.

  1. Boil water, then let it stop bubbling for 30 seconds. You want it very hot but not raging.
  2. Put 1 cup jowar flour in a wide plate or parat with a pinch of salt. Pour in about 3/4 cup of the hot water, stirring with a spoon.
  3. Cover for 2 minutes so the flour absorbs water and cools just enough to touch.
  4. Dip your palm in cool water and knead hard for a full minute, pressing and folding. The dough should feel smooth like soft clay, with no dry cracks at the edge.
  5. Divide into balls the size of a lemon. Keep the rest covered with a damp cloth.

Why wet palms and warm dough matter

Knead while the dough is still warm: the heat finishes gelatinising the starch, and cooled dough turns crumbly and short. If the edges split when you press a ball flat, you have been too stingy with water. Sprinkle a teaspoon and knead again.

Should I roll jowar roti or pat it by hand?

Pat it. A rolling pin sticks and tears jowar dough, though a plastic sheet or butter paper placed under and over the ball lets you press it flat with a plate. The traditional bhakri method is to slap the ball between wet palms, rotating, until it spreads to about 15 to 18 cm. It takes a few attempts. Thin edges thicker than the middle are normal for beginners.

How do I cook it on the tawa?

Use a heavy tawa on medium-high. A common cook method is to press the roti onto a damp cotton cloth spread over a plate, then flip it so the wet side meets the hot tawa first. The moisture keeps the surface from burning before the inside sets.

  1. Lay the patted roti on the damp cloth, then slide it onto the tawa wet side down.
  2. After about 30 seconds, the top turns dry. Flip with a spatula and cook the other side for a minute.
  3. Lift the roti with tongs and hold it directly over an open flame, or flip it again on the tawa and press the edges gently with a folded cloth. It puffs as steam fills it.
  4. Pull it off, brush a small amount of ghee or oil if you like, and wrap in a cloth immediately.

Why does my jowar roti still crack or break?

  • Old flour. Jowar flour goes stale and bitter in a few weeks; whole-grain flour holds its oils and can go rancid. Smell it: fresh flour smells faintly sweet, stale flour smells like old oil. Buy small quantities, or have it ground fresh.
  • Cold or too little water. Use truly hot water and enough of it.
  • Too short a knead. A minute of hard kneading does more than five minutes of gentle pressing.
  • Tawa too cool. The roti sits and dries before it sets.
  • Dough left to rest too long. Make rotis within 10 to 15 minutes; the dough dries out fast.

How do I keep it soft in a hotpot?

Wrap each roti while hot in a clean cotton cloth, then stack inside a hotpot or steel box lined with the cloth. Do not use plastic wrap; the trapped steam turns the roti soggy and sticky. Jowar roti is best eaten within a couple of hours. Reheat on a dry tawa and sprinkle a few drops of water on it to bring back softness.

How many calories and how much protein in one jowar roti?

USDA FoodData Central lists sorghum flour at roughly 357 to 375 kcal and 8 to 9.5 g protein per 100 g. A roti made from 40 g of flour therefore comes to roughly 145 kcal and 3 to 4 g protein before ghee. A teaspoon of ghee adds about 40 kcal. Your tawa, thickness and flour weight change this, so weigh the flour once to learn your own roti.

Is jowar roti gluten free?

Jowar (sorghum) does not contain gluten. The NHS names wheat, barley and rye as the cereals that do. The risk is cross-contact: flour ground on a mill that also grinds wheat can carry traces, and some packs blend flours. For coeliac disease, buy packs labelled gluten free and read our guide on gluten-free desi eating.

Worth knowing first

Jowar roti is a food, not a treatment for any condition. People with diabetes should watch the portion and how it affects their own readings, and anyone with kidney disease or a doctor-set diet should ask before changing grains. If you have coeliac disease, a rash after eating, or long-lasting bloating, see a doctor before testing grains yourself. Discard flour that smells musty or shows webbing or insects.

Questions about jowar roti and bhakri

How do I make jowar roti soft?

Knead jowar flour with very hot water while the dough is still warm, using wet palms for about a minute. Cook on a hot tawa and wrap in a cloth straight away.

Why is my jowar roti cracking?

Usually the water was not hot enough, the dough was kneaded too briefly or left to dry, or the flour is old. Add a sprinkle of hot water and knead again.

What is the difference between jowar roti and bhakri?

Bhakri is the thicker, rustic version patted by hand, common in Maharashtra and Karnataka. Jowar roti usually means the thinner kind, often pressed on a sheet.
