Jowar Roti Secrets
Learn how to make a soft jowar roti that never cracks, and stay for the one trick that makes all the difference in your kitchen.
Why roti cracks
Jowar flour lacks gluten, so the dough can fall apart. Hot water scalds the starch, turning it sticky and glue-like. A warm dough finishes gelatinising, giving the roti its cohesion.
Hot water dough
Mix one cup of jowar flour with about three-quarters cup of near-boiling water and a pinch of salt. Stir until combined, then cover the bowl for two minutes so the flour absorbs the heat and cools enough to touch.
Wet palms, minute knead
While the dough is still warm, dip your palms in cool water and knead hard for a full minute. Press, fold, and repeat. The dough should feel smooth and elastic, not dry or crumbly.
Pat, don't roll
Skip the rolling pin. Instead, slap the dough between wet palms, rotating as it flattens to about fifteen to eighteen centimeters. It may take a few tries, and thicker edges are normal for beginners.
Cook on hot tawa
Heat a tawa on medium-high. Place the roti, wet side down, on a cloth and slide it onto the pan. After thirty seconds the top dries; flip and cook the other side for a minute. Finish by holding it over a flame or pressing edges.
One roti calories
A 40-gram jowar roti, made from one cup of flour, contains roughly 145 calories before any ghee. That’s a modest amount for a filling grain.
One roti protein
The same roti offers about three to four grams of protein, giving a modest boost to your daily intake and helping keep you satisfied between meals.
The one mistake to avoid
The biggest mistake is using too little hot water or a short knead. A dry, cold dough will crack when you pat it. Add a teaspoon of water and knead a bit longer to keep it soft.
