Saffron for Weight Loss (Zafran): The Snacking Study, the Catch
Saffron for weight loss rests on one small, interesting study about snacking, and the honest verdict is “a small, uncertain effect from a standardised extract, not from the threads in your kitchen”. Zafran (saffron) is wonderful in kheer and kahwa. As a slimming tool, it’s mostly a swap: its aroma lets you use less sugar.
Here’s the catch in one line. When the larger reviews pooled all the trials, weight barely moved. And the jar of threads you’d buy for the purpose costs more than a month of fruit.
Does saffron help in weight loss?
A little, maybe, and not the way it’s sold. The famous paper is Gout and colleagues, 2010. Sixty mildly overweight, healthy women took either a saffron extract capsule or a dummy capsule for eight weeks, without being told to diet. The saffron group reported fewer snacking episodes in their food diaries and lost a bit more weight than the placebo group.
That’s genuinely interesting. It’s also one small, short trial of a branded extract, funded and run in the commercial setting, with snacking measured by self report.
Then look wider. A 2022 meta analysis pooled 25 randomised trials in people with overweight or obesity. Average weight change was about a third of a kilo, and it wasn’t statistically significant; BMI and waist didn’t change clearly either. An earlier 2019 review of 14 trials saw no significant effect on weight. So: small, mixed, extract based, short. That’s the fair summary.
Quick facts
- Names: saffron, zafran, kesar; Crocus sativus stigmas.
- Weight verdict: small and uncertain; best used as a sugar swap.
- Trial form: standardised extract capsules, not culinary threads.
- Safety flag: fine as a culinary pinch; large amounts are toxic; caution in pregnancy.
- Price signal: one of the dearest spices by weight, so fakes are common.

Why isn’t a pinch in chai the trial dose?
Because the trials didn’t use threads. They used a measured extract made so that every capsule carried the same amount of the active compounds. Threads vary by grade, age, storage and whether they’re real at all. A pinch steeped in milk is a lovely thing, but nobody has tested it for weight, and you can’t calculate your way from one to the other.
We won’t give the capsule amount as advice. If you’re considering a saffron supplement, the pack or your doctor sets the amount, and you should read the safety box below first.
How do you use zafran so it actually helps?
Use its aroma to cut sugar. Saffron and cardamom make a drink taste rich and finished, so the sweetness you reach for drops. That’s a kitchen tip, not a research finding, but it’s where the real calories are saved.
- Soak 6 to 8 threads in 2 tablespoons of warm water or milk for 15 minutes until golden.
- For kahwa, steep green tea, a crushed elaichi and a small piece of dalchini in 250 ml of water for 3 minutes; add the saffron liquid.
- Skip the sugar, or use half a teaspoon instead of two. Each teaspoon left out saves roughly 16 to 20 kcal.
- For kheer or zafrani doodh, halve the sugar in your usual recipe and add the soaked saffron at the end; taste before adding more.
Recipes and variations live on our sugar free zafran kahwa page. General use, storage and grades are covered in how to use saffron, and the price story is in why saffron is expensive.
The bloom check before you pay
Drop two or three threads into a glass of room temperature water and wait. Real saffron releases colour slowly, a yellow halo spreading over several minutes, while the threads themselves stay red. Threads that bleed red at once, or turn pale and stringy, suggest dye or fake material. It’s a useful first check, not proof; only a lab settles it. Our fake saffron guide lists the other giveaways.
Is saffron milk at night good for weight loss or weight gain?
Neither, on its own. A glass of full cream milk with sugar is roughly 150 to 250 kcal depending on the milk and the sugar. Add saffron and the number doesn’t change. Make it with toned milk and little or no sugar and it becomes a reasonable bedtime drink. Make it with malai, sugar and dry fruit and it’s closer to a dessert.
The same logic holds for chai. Our chai and weight loss page does the sums.
Is saffron worth the money for weight loss?
Honestly, no. For the price of a few grams of good saffron you could buy a week or more of fruit and vegetables, which fill you up and replace snacks with real fibre. If you love saffron, keep it as flavour. Don’t buy it as medicine.
The rest of the honest list, from isabgol to warq, is ranked in herbs for weight loss, ranked, and our Desi Weight Loss section has the everyday plan. Realistic loss is roughly 0.5 to 1 kg a week after the first week or two.
Large amounts of saffron, far beyond a culinary pinch, are toxic, so stay with kitchen amounts. In pregnancy, higher amounts have been linked to uterine stimulation and miscarriage risk; keep to a pinch in food and ask your doctor before any supplement. People on blood thinners, blood pressure medicine or antidepressants should check with a pharmacist before taking saffron capsules. Diabetes on insulin or sulfonylureas means hypo risk when you eat less, so involve your doctor before dieting. Stop and get help for vomiting, bleeding, yellowing skin or numbness after a supplement.
Zafran and weight: common questions
Does saffron help in weight loss?
Only slightly, if at all. One small extract trial recorded less snacking, but a review of 25 trials saw no significant weight change overall.
Can saffron reduce belly fat?
No. Pooled trial results gave no clear change in waist size. Belly fat drops with overall weight loss, not with a spice.
Is saffron milk at night good for weight loss?
Only if it replaces something sweeter. With little sugar and toned milk it’s a light drink; with sugar and malai it adds calories.
Is saffron an appetite suppressant?
An extract reduced self reported snacking in one 60 person trial. That’s a hint, not proof, and threads in food haven’t been tested.
What are the side effects of saffron?
Culinary amounts are generally well tolerated. Large amounts can cause vomiting, bleeding and dizziness, and can be dangerous in pregnancy.
How much saffron per day is safe?
A few threads in a dish or drink is a normal culinary amount. For capsules, the pack or your doctor sets the amount.
Is it safe to take saffron in pregnancy?
A pinch in food is a common practice, but higher amounts can stimulate the uterus. Avoid supplements unless your doctor agrees.
Zafran wala doodh: weight gain or loss?
It depends on the milk and sugar, not the zafran. Toned milk with no sugar is light; full cream with sugar can lead to gain.
Does saffron tea boost metabolism?
No reliable evidence says so. The benefit of saffron tea is that it can replace a sweet drink.
