Is quinoa worth it? For most desi families, no, not as a daily staple: a katori of daal with chawal or roti already gives complete protein for a fraction of the price. Quinoa earns its place in a gluten-free kitchen, for vegetarians who want variety, and as an easy side that cooks in 15 minutes. Quinoa vs daal chawal vs brown rice: the honest numbers
Quinoa’s fame rests on protein. More than rice? Yes. More than daal? No. Here’s how a normal cooked katori compares, in round figures.

Quinoa does carry all nine essential amino acids (the protein building blocks your body can’t make) in a good balance, which is why it’s called a “complete protein”. Daal is rich in one called lysine and low in another, methionine, while rice is the reverse, so when you eat the two on the same day, even at different meals, each fills the other’s gap and your body gets the full set without any help from an imported seed. Price per serving: do your own sum
Prices change every month and differ by city, so here’s the sum instead of a number. A cooked serving uses about 50 g of raw quinoa, rice or daal. Divide the price of 1 kg by 20, and that’s your cost per serving. Do it for quinoa, basmati, masoor and a millet like kangni or samak. In most Pakistani and Indian markets, imported quinoa comes out several times dearer per serving than daal, which is where the verdict comes from.
Who gains most from quinoa?
- People with coeliac disease or wheat allergy, who need a quick, protein-rich base that isn’t rice again. Buy a pack labelled gluten-free, since quinoa can be packed near wheat. Our gluten-free desi eating guide covers the rest.

- Anyone cooking for one: it’s ready faster than brown rice and reheats well.

How to cook quinoa: rinse, ratio and pressure cooker
Quinoa seeds wear a natural coating called saponin. It’s the plant’s own defence against birds and insects, it foams like soap when shaken in water, and it leaves a bitter, faintly soapy taste on the tongue that puts many people off quinoa for good after one badly rinsed batch. Rinse it. Most packs are pre-washed, but a quick rinse removes whatever is left.
- Put 1 cup quinoa in a fine steel sieve (the holes of a normal chhalni are too big). Rinse under running water for 1 to 2 minutes, rubbing with your fingers, until no foam appears.
- Optional: dry-roast the drained quinoa in the pot for 2 minutes until it smells nutty. This gives a toastier, less grassy taste.
- Add 2 cups water and a pinch of salt. Bring to a boil, cover and simmer on low for 15 minutes.
- Switch off and rest, lid on, for 5 minutes. Fluff with a fork. Each seed should show a little white curl, its germ, loosened by cooking.
Pressure cooker: use 1.5 cups water per cup of quinoa, cook to 1 whistle on medium heat, then let the pressure drop naturally. More whistles make mush. Rice cooker: 1 to 2 by volume, normal cycle, rest 5 minutes.
Quinoa pulao and quinoa khichdi, desi style
Quinoa pulao (serves 3)
- Heat 1 tablespoon oil or ghee. Add 1 teaspoon zeera, 1 tej patta, 3 laung and 2 green elaichi.
- Fry 1 sliced onion until golden, then add 1 teaspoon ginger-garlic paste and 1 chopped green chilli.
- Add 1 cup rinsed quinoa, half a cup of peas and 1 diced carrot. Stir 2 minutes.
- Pour in 2 cups water with salt, cover and cook on low 15 minutes. Rest 5 minutes, fluff, finish with dhania.
Quinoa khichdi (serves 3)
Rinse half a cup of quinoa and half a cup of moong daal together. Temper 1 teaspoon zeera and a pinch of hing in 1 tablespoon ghee, add the quinoa, daal, half a teaspoon haldi, salt and 3.5 cups water, and pressure cook for 3 whistles. It’s soft, filling and pairs well with dahi and achaar.
Can you make quinoa roti?
Only partly. Quinoa flour has no gluten and a strong grassy flavour, so pure quinoa roti cracks and tastes bitter to many people. Mix 1 part quinoa flour with 3 parts atta for a normal roti, or use the boiling-water method with pure quinoa flour and roll between butter paper. Honestly, it’s easier to eat quinoa as a grain.
Quinoa is new to desi kitchens, but its family isn’t. Bathua (chenopodium), the winter saag cooked into saag and raita across Punjab, is a close relative, and quinoa’s own young leaves can be cooked like bathua saag. In the Andes, where quinoa comes from, it was a staple for thousands of years. In 2013, the United Nations named it the International Year of Quinoa.
Is quinoa good for diabetes, weight and babies?
Diabetes: quinoa has similar carbohydrate per katori to brown rice. Its extra protein and fibre soften the rise a little, but portion still decides most of it. A single katori with daal and sabzi is sensible; a heaped plate isn’t. Never change or skip your medicines because you’ve switched grains, and check your own readings to see how you respond.
Weight: quinoa fills you up well, but it isn’t low in calories and doesn’t dissolve fat. It can fit a weight-loss plate in the same portion as rice.
Babies and children: well-rinsed, soft-cooked, mashed quinoa is fine from 6 months, rotated with other first foods, with no salt or sugar added under 1.
Myth: quinoa is a superfood that beats everything else on your plate
No single seed beats a varied plate. Quinoa has good protein, fibre, iron and magnesium, and so do daal, chana, bajra and rajma, often at a small share of the price. The “superfood” label is marketing, and it’s why quinoa costs what it does. Enjoy it for what it is: a tasty, quick, gluten-free seed.
You have kidney disease or a history of kidney stones: quinoa has moderate oxalate, potassium and phosphorus, so ask your kidney doctor how it fits your plan. You have a quinoa allergy (rare, but swelling, hives or wheezing after eating means stop and get urgent help if breathing is affected). You’re on a strict gluten-free diet: buy only packs labelled gluten-free. Bloating is common in the first week of any high-fibre switch; start with half a katori and drink water. Store dry quinoa airtight for up to a year, and eat cooked quinoa within 3 to 4 days from the fridge.
