Pressure Cooker vs Slow Cooking: Nutrients and the Rajma Myth
Fifteen minutes. That is roughly how long a pressure cooker takes to turn hard, dry rajma into something soft enough to mash with a spoon, a job that would otherwise eat two hours on an open flame. The idea that this speed comes at a nutritional cost does not hold up well.

What actually happens to nutrients under pressure
Pressure cooking works by sealing steam inside a closed pot, which raises the boiling point of water above 100°C, typically to around 115 to 120°C inside a standard stovetop cooker. Food cooks faster because it is exposed to a higher temperature, not because anything unusual is happening chemically.
Two things affect nutrient loss during any cooking method: how long the food is heated, and how much of the cooking water is discarded. Pressure cooking generally shortens cooking time considerably compared to open-pot boiling for dals, beans and tough vegetables, and because the pot is sealed, water-soluble vitamins like vitamin C and several B vitamins, which leach into cooking water and can be lost when that water is drained, are largely retained if the liquid is eaten as part of the dish, as it usually is in dal, curry and khichdi. Comparative studies on vegetables generally find pressure cooking retains vitamin C and B vitamins as well as, or better than, boiling, largely because of the shorter exposure time, though results vary by specific vegetable and cooking duration.

What about vegetables specifically
Green leafy vegetables and delicate produce like spinach or bhindi cook so quickly under pressure that overcooking, which does destroy more vitamin C and B vitamins the longer it continues, becomes a real risk if timing is not watched carefully. For these, a very short pressure cook (1 to 2 minutes) or even a quick open-pot steam can preserve more nutrients and colour than a full multi-whistle cycle meant for dense pulses. The method itself is not the deciding factor for vegetables so much as matching the cooking time to how delicate the ingredient actually is.
Myth: pressure cooking is “unhealthy”
This belief seems to come from two separate worries getting mixed together: old aluminium cookers, and a general unease about anything cooked “too fast.” Neither holds up as a reason to avoid pressure cooking itself. The cooking method (sealed pot, higher temperature, shorter time) is not inherently worse for nutrition than slow, open cooking, and for many dals and beans, it is genuinely better, since less time at heat generally means less breakdown of heat-sensitive vitamins.
The real material question: aluminium vs steel
Older pressure cookers are commonly made of aluminium, which is lightweight and heats quickly but can leach small amounts of aluminium into food, especially with acidic ingredients like tomato, tamarind or lemon, and with pitted or heavily used cookers. The amounts involved are generally considered small relative to what a healthy body clears, and food is not the main source of aluminium exposure for most people, but stainless steel or hard-anodised cookers avoid the question entirely and are the safer long-term choice, particularly for households cooking acidic dishes daily. If you use an older aluminium cooker, avoid cooking very acidic dishes in it regularly, and replace it if the inner surface is scratched, pitted or discoloured.
Rajma, lobia and the one real safety issue
Raw or undercooked kidney beans (rajma) and, to a lesser extent, other beans like lobia contain a natural toxin called phytohaemagglutinin, which causes severe nausea and vomiting if the beans are not cooked thoroughly. Properly pressure cooking rajma after an adequate soak reliably destroys this toxin, since it requires sustained high heat, which is exactly what a pressure cooker delivers efficiently. This is one area where pressure cooking is arguably the safer method compared to a slow cooker set on a low, gentle heat, since slow cookers may not reach a high enough temperature for long enough to fully neutralise the toxin in raw, unsoaked beans.
- Soak rajma or lobia for at least 8 hours, or overnight, in enough water to cover by 5cm, discarding the soaking water afterward.
- Pressure cook with fresh water, using about 3 cups of water per 1 cup of dry beans, for 15 to 20 minutes after the first whistle on medium heat (adjust for your specific cooker and altitude).
- Check that beans are fully soft and mash easily between two fingers before serving; if still firm, cook for another 2 to 3 whistles.
- Never rely on a slow cooker alone, without a prior boil, for raw dried kidney beans, since low, prolonged heat can be less effective at destroying the toxin than a proper boil or pressure cook.
Never skip soaking dried rajma or lobia and expect a quick pressure cook to make them fully safe; adequate soaking plus thorough cooking together do the job. Always let pressure release fully, or use the quick-release valve correctly, before opening a cooker, since steam burns from a forced-open lid are a genuine kitchen hazard. Discard any pressure cooker with a damaged gasket, a rusted safety valve, or visible warping, and have the gasket replaced every 12 to 18 months with regular use. Keep small children away from a hot cooker and its steam vent entirely.
What about lectins in beans generally
Lectins are naturally occurring proteins found in many beans and legumes, and raw kidney beans carry the highest concentration among commonly eaten beans, which is why they cause the vomiting and nausea already covered above if undercooked. Long, slow cooking over a low flame (dhimi aanch) has traditional value in desi cooking for flavour development in dishes like haleem, nihari or a slow-simmered yakhni, where the extended time is part of the dish’s character, not a nutritional strategy. Both methods have their place: pressure cooking for everyday dal and beans, slow cooking for dishes where time itself builds the flavour.
One more practical point worth remembering is altitude. Water boils at a lower temperature at higher altitude, which means both open-pot cooking and, to a lesser extent, pressure cooking take longer in hill stations like Murree or Nathiagali than at sea level.
