Onion Leaking White Liquid (Pyaz): Normal Sap or Rotten?

If your onion is leaking white stuff, a milky, sticky juice that beads up on a freshly cut surface, it is the onion’s own sap and it is safe to eat. Spoilage looks and smells different: soft wet layers, a sour or rotten smell, slimy brown liquid or mould. Fresh onions and cuts near the root end ooze the most.

Sap or spoilage, in ten seconds

  • Normal sap: clear to milky, sticky, smells sharply of onion, comes from firm layers.
  • Trim it: one soft or bruised outer layer, a small brown spot, green shoots on a firm bulb.
  • Bin it: mushy or slimy layers, sour or rotten smell, brown or grey ooze, fuzzy mould inside.
  • Cut onion: into a lidded box in the fridge, never left out on a hot counter.

Why is my onion oozing white juice?

An onion bulb is a stack of fleshy leaves packed with water, natural sugars and sulphur compounds. Slice through them and you open thousands of tiny cells at once, so juice wells up on the cut face. In some onions it looks milky and turns tacky as it dries, almost like glue on the knife. That stickiness is the sugars.

Two things make it more obvious. A freshly harvested pyaz, the kind sold in heaps early in the season with green necks and thin skins, has not dried down yet, so it holds more juice. And the root plate, the hard flat base where the roots grow, is where the layers join and the juice collects, so cuts close to it leak more.

The same cut sets off the chemistry that stings your eyes. Breaking the cells lets an enzyme meet the onion’s sulphur compounds, and that reaction makes the tear-causing gas. So a juicy, weepy onion is often a sharp, eye-watering one too. Nothing about it means the onion has gone off.

Is the white liquid in onion safe?

Yes. It is part of the onion, the same thing you eat when you eat the onion. You can cook with it, wipe it off, or rinse the cut face if the stickiness bothers you. People with sensitive skin sometimes find raw onion juice itchy on their hands; a quick wash with soap fixes that.

The one situation to slow down on: if the liquid is not milky but brownish, foamy or slimy, and the layers around it give way when you press, you are looking at rot, not sap.

The chill trick for a tidier cut

Put a whole onion in the fridge for 20 to 30 minutes before you chop it. A cold onion leaks less, the sticky sap stays put on the board, and it stings your eyes less too. Use a sharp knife and cut the root end last, since that is where the juice and the sting collect.

The black powder question, and buying red versus white onions, are covered in our onion rot and black mould guide, so this page stays on the white liquid. Squeeze test: a good onion feels as firm as an apple. If your thumb sinks in, open it up before you trust it.

Why is my onion slimy?

Slime is different from sap. Sap is sticky and stays clear or milky. Slime is slippery, often comes with a sour smell, and the layer under it is limp and translucent. Usually it starts with bruising or damp storage: an onion kept in a plastic bag, in a humid corner or next to potatoes sweats, and the wet surface lets rot set in. Once the slime runs between layers, the whole onion is on its way out.

For a cut onion in the fridge, a slight film after a day or two is common. A thick, slippery coat with an off smell is the cue to throw it away.

Sap is sticky and smells like onion. Rot is slippery and smells like it should not be eaten.

Can I eat an onion that is sprouting?

Yes, if the bulb is still firm. The green shoot is edible, a little like spring onion, though it can taste bitter in the middle of the bulb. Sprouting means the onion has started using its own stores, so it softens faster from here; cook it soon. Keeping onions from sprouting in the first place, especially in a Pakistani summer, is a storage job, explained in our aloo and pyaz storage guide.

How long does cut onion last in the fridge?

A cut onion keeps for a few days in a closed container in the fridge. Use it sooner rather than later, and let your nose and eyes decide on the day: firm, onion-smelling and dry at the edges is fine; slimy, sour or soft goes in the bin. Two rules matter more than any number:

  1. Put cut onion away promptly. Do not leave it on a warm counter for hours, especially in summer heat.
  2. Store it in a glass or plastic box with a tight lid, not loose on a plate, so the smell does not spread to milk and butter.
  3. Place it cut-side down on a small saucer inside the box. The sticky ooze stays on the saucer, not smeared across the box.
  4. Keep chopped onion in oil, or onion paste, in the fridge and use it within a short time. Never store it at room temperature.

Why does onion juice turn pink?

Grated or pureed white onion sometimes turns pinkish after a while, especially in a paste. It is a harmless colour reaction between the onion’s own sulphur compounds and other natural parts of the onion, much like garlic paste turning green. It changes the look, not the safety. If pink paste also smells sour or looks slimy, treat it as spoiled because of the smell, not the colour.

Kitchen limits and when to ask for help

Do not cut away mould from a soft, wet onion and use the rest; once the layers are slimy, throw the whole bulb out. Wash the knife and board after cutting a rotten onion. If you ate an onion that turned out to be off and you get vomiting, diarrhoea or stomach cramps, drink fluids in small sips. See a doctor if you cannot keep fluids down, you see blood in your stool, you have a high fever, or the diarrhoea runs past a few days. Onion white liquid: your questions

Why is my onion leaking white stuff?

It is natural sap from the cut cells, full of sugars and sulphur compounds. Fresh onions and cuts near the root plate leak the most.

Is the white liquid in onion safe to eat?

Yes. It is part of the onion. Cook with it or rinse it off; neither changes safety.

What is the sticky white liquid from onion?

Onion juice that turns tacky as its natural sugars dry on the board or knife. It is not a sign of spoilage.

Why is my onion oozing white juice from the bottom?

The root plate is where the layers meet, so juice gathers there. A firm bulb with a smell of fresh onion is fine.

How do I know if an onion has gone bad?

Look for soft or slimy layers, a sour or rotten smell, brown ooze or fuzzy mould inside. A firm, sharp smelling onion is good.

Is a slimy onion safe?

No, not when the slime is slippery, smells sour and the layer underneath is limp. Throw it away.

Can I cut off a bad part of an onion and use the rest?

Only when the damage is a single bruised or dry layer and the rest is firm and smells normal. A wet, slimy or mouldy interior means the whole bulb goes.

Can I eat an onion that has started sprouting?

Yes, while the bulb is firm. Pull out the shoot if it tastes bitter and use the onion soon.

How long can cut onion stay in the fridge?

A few days in a sealed container. Check it before use and bin it if it is slimy, sour or soft.

Why does my onion paste turn pink?

A harmless reaction between the onion’s own compounds. It is a colour change only, as long as it smells normal.

Can I leave cut onion out overnight?

Better not, especially in hot weather. Put cut onion in a lidded box in the fridge soon after cutting.
