So which is it? Here is the actual chemistry of heated honey, checked against what real toxicity looks like.

Where the “heated honey is poison” idea comes from
This warning appears in classical Ayurvedic texts, which describe honey as becoming virudhha, incompatible or harmful, when heated, and traditionally caution against cooking with it or adding it to very hot liquids. In that framework, heating honey is said to turn it into something heavy and difficult to digest rather than the light, easily assimilated substance it is in its raw state. This is a real and old traditional position, described here as tradition, and it deserves to be stated accurately rather than mocked. It is a different claim from saying heated honey is chemically toxic in a measurable, modern sense, and that distinction is exactly where the confusion sits.
What actually happens to honey when it is heated
When honey is heated, particularly above around 60°C for any length of time, some things genuinely change. Its natural enzymes, delicate proteins that give raw honey some of its distinct properties, start to break down. Volatile aromatic compounds evaporate, which is why heated honey smells and tastes flatter than raw honey drizzled on cold toast. At higher temperatures and longer exposure, honey’s natural sugars can form a compound called hydroxymethylfurfural, HMF, through a normal sugar-browning reaction similar to what happens when sugar caramelises in a pan.
HMF is monitored in commercial honey quality standards because high levels indicate a honey has been overheated or stored badly, and very high concentrated doses of HMF have shown some toxicity in laboratory animal studies. The amount of HMF formed by stirring a spoon of honey into a cup of hot chai, or adding it to warm haldi doodh, is nowhere near those laboratory-tested concentrations. In short: real chemical change, measurable in labs, but not toxic at kitchen quantities and temperatures.
Ayurveda’s caution against heated honey sits inside a broader theory of food combining and digestive quality, not a claim about a specific measurable poison. It is fair to respect this as centuries of careful observation about how honey behaves and is best enjoyed, while being clear that “difficult to digest” in traditional terms is not the same statement as “unsafe” in a food-safety sense.

For safety, no, a spoon of honey in hot chai is not going to harm a healthy adult or child over one year old. Myth: heated honey turns into a specific poison
This is the version of the claim that goes too far and should be corrected directly. There is no evidence that ordinary cooking or hot-drink temperatures convert honey into a dangerous toxin for a healthy adult or child over one. The genuine caution belongs to babies under one year regardless of temperature, because of a completely separate risk, botulism spores that an infant’s gut cannot yet handle, which heat does not neutralise reliably at home cooking temperatures either.
