Brown Bread vs White Double Roti: How to Spot Maida in Disguise

A brown loaf can be white bread with a tan. Flip the pack: if “refined wheat flour”, “maida” or plain “wheat flour” comes first, it’s mostly maida, coloured with caramel or a little bran. Why brown bread is often maida in disguise

Bread colour comes from whatever the baker adds. Whole wheat flour makes a loaf brown. So does caramel colour, malt, molasses, cocoa, or a handful of bran stirred into white dough, and all of those cost less than making the whole loaf from whole wheat.

None of this is illegal. The ingredient list is printed truthfully, it just sits on the back in small type while “brown” sits on the front in big letters, and because food law in many countries, including Pakistan and India, makes brands list ingredients from the largest amount to the smallest by weight, the very first word on that list tells you what most of the loaf is made from. Read it first.

Picture a glass of water with a few drops of tea in it. Brown? Yes. Chai? No.

The one-minute shelf test

Pick up two loaves, one white and one brown, from the same brand. Read the first three ingredients on each. If they match except for a colour or bran line, you’ve found a white loaf in a brown jacket.

How to read a bread label in 60 seconds

  1. First ingredient: you want “whole wheat flour”, “wholemeal flour” or “atta”. “Wheat flour”, “refined wheat flour” or “maida” means white flour.
  2. Look for “whole”: “100% whole wheat” or “100% whole grain” is the strongest claim. “Made with whole wheat” can mean a small share.
  3. Fibre per 100 g: genuine whole wheat bread usually shows about 6 g or more. White bread is around 2 to 3 g.
  4. Sugar per 100 g: most loaves carry some. Lower is better, and about 5 g or under is a good target.
  5. Sodium per 100 g: bread is a quiet source of salt, often around 400 to 500 mg sodium per 100 g. Pick the lower one, especially with high BP.
  6. Colour additives: caramel colour, often written as INS 150 or E150, in a “brown” bread is a clue that colour is doing some of the work.
  7. Slice weight: check the serving size, usually 25 to 35 g a slice, so you can compare with a roti.

A word on digestive biscuits. The name goes back to the 1800s, when bakers claimed the baking soda in them helped digestion. Today most carry a fair amount of refined flour along with sugar and oil, and a common size is roughly 70 kcal each. Good branding. Still a biscuit.

Whole wheat bread vs roti: which is better?

Weight for weight they’re closer than people think. One medium phulka, made from about 30 g of atta, comes to roughly 100 to 120 kcal depending on size. Fresh roti from good atta wins on salt and simplicity. Genuine whole wheat bread is a fair second, especially for a rushed breakfast or a school lunch, and the white loaf trails both, not because it does you any harm but because it brings noticeably less fibre for the same calories and leaves you hungry sooner.

The bigger difference is usually what goes on the bread. Butter, jam, mayonnaise and cheese can add more than the slices themselves. An egg, a smear of peanut butter, daal or paneer with vegetables makes a steadier plate.

Myths about bread, roti and weight

Myth: brown bread is always healthier

Only when it’s whole wheat. A caramel-coloured maida loaf is nutritionally close to white bread. Sometimes sweeter.

Myth: bread makes you fat but roti doesn’t

Weight comes from the total you eat over weeks, not from one food. Two slices and one roti land in a similar range; four slices with butter do not.

Myth: the best whole wheat bread for weight loss is the lowest-calorie one

Real, lasting weight loss runs at roughly 0.5 to 1 kg a week after the first week or two, when some quick water weight comes off. For South Asians, health risk begins at a lower weight than standard charts show: overweight from a BMI of about 23, obesity from about 27.5, and a waist above about 90 cm for men or 80 cm for women is worth acting on.

Whole wheat bread and blood sugar

It’s a better choice than white bread, but it still raises blood sugar, like any roti does. Keep it to one or two slices, pair it with protein such as egg or daal, and check your meter if you want to see how you respond.

How to make whole wheat bread at home without an oven

A heavy pateela or an old pressure cooker works as a small oven. Take the gasket and whistle out of the cooker first; a sealed cooker must never be used for baking. This makes one small loaf of about 8 slices.

  1. Mix: 250 g fine atta, 1 teaspoon instant yeast, 1 teaspoon sugar and ½ teaspoon salt.
  2. Knead: add 1 tablespoon oil and about 180 to 190 ml lukewarm water, and knead 8 to 10 minutes into a soft, slightly sticky dough.
  3. First rise: cover and leave in a warm spot for about 1 hour, until doubled.
  4. Shape: press out the air, roll into a log and place in a greased tin that fits inside your pot. Cover and rise again for 30 to 40 minutes.
  5. Heat the pot: spread about 1 cup of salt or clean sand in the base, set a stand on it, cover, and heat on medium for 10 minutes.
  6. Bake: set the tin on the stand, cover, and bake on low heat for 35 to 40 minutes, until the top is brown and the base sounds hollow when tapped.
  7. Cool: turn it out and cool fully on a rack before slicing, or the crumb goes gummy.

When to check with a doctor

Every wheat bread, brown or white, contains gluten, so none of it is safe with coeliac disease or a wheat allergy. With high BP or kidney disease, watch bread’s salt and choose the lower-sodium loaf. If you take insulin or diabetes tablets such as gliclazide or glimepiride, cutting bread and roti sharply can bring on a low, so plan changes with your doctor and never adjust a medicine yourself. Don’t diet in pregnancy or while breastfeeding, keep daily intake above about 1,200 kcal for women and 1,500 for men unless supervised, and help children and teenagers through family habits rather than calorie cuts. Anyone with a past eating disorder, thyroid disease or kidney disease should get advice before a weight-loss plan. Weight loss you can’t explain always needs a check-up.
