Beetroot (Chukandar) Powder at Home: Lip Tint, Pink Roti, Hair
Low and slow is the whole secret: to make beetroot powder at home, slice or grate chukandar thin and dry it at 50 to 60 °C, because high heat turns that ruby colour a dull brown. Ground and kept in the dark, it gives you pink roti, pink idli, a sheer lip tint and a hair gloss that shows only in sunlight. Here’s how to make it, use it, and what it won’t do.
How to make beetroot powder at home
Choose firm, heavy, smooth beetroots with no soft spots. Small to medium roots are sweeter and less woody than giant ones. Wear gloves or accept pink hands for a day. Your chopping board will stain too, so use a plastic one or rub a wooden board with lemon and salt afterwards.
- Wash and peel about 1 kg beetroot (4 to 5 medium roots). Peeling gives a cleaner, less earthy powder.
- Slice or grate: slice as thin as you can, 2 to 3 mm, or grate coarsely. Grated beet dries in about half the time.
- Spread in one layer on trays lined with baking paper. Crowded pieces steam instead of drying.
- Oven: 50 to 60 °C, door propped open with a spoon, 4 to 6 hours for slices and 2 to 3 for grated beet, turning every hour.
- Dehydrator: about 55 °C for 8 to 10 hours.
- Air fryer: dehydrate mode only, at 55 to 60 °C, small batches, checking every 20 minutes. Times vary a lot between machines.
- Without an oven: dry in a shaded, breezy spot or under a fan for 2 to 4 days in dry weather, covered with muslin. Hard sun fades the colour to brick.
- Test: slices should snap like crisps; grated beet should crumble. Leathery pieces that bend will go mouldy in the jar.
- Grind in short pulses, sieve through a fine strainer, and let it cool before bottling.
Expect roughly 100 to 120 g of powder from a kilo, since beetroot is mostly water. A microwave is a poor tool for this; it dries unevenly and scorches the thin edges while the middles stay soft.
Storage
Light and damp both ruin it. Keep beetroot powder in a dark or foil-wrapped glass jar with a tight lid, away from the stove, and it holds its colour for about 6 months; after that it fades toward brown but is still safe while it smells clean. Clumping, a sour or musty smell, or any fuzz means throw it away.

Pink roti, idli and frosting: using it in food
Here’s where beetroot powder earns its jar. It gives natural pink food without a single drop of bottle colour, and children who refuse a beetroot salad will happily eat a pink paratha.
- Pink roti or paratha: 1 to 2 teaspoons per cup of atta, mixed into the dry flour before adding water. Cook on medium, not high; a very hot tawa browns the colour.
- Idli or dosa: 1 teaspoon per cup of batter, stirred in just before steaming or spreading.
- Frosting and kheer: 1/2 to 1 teaspoon per cup of frosting or a pot of kheer, added after cooking. Too much and it tastes earthy.
- Kids’ rice or pasta: stir a teaspoon into the cooking water for pink grains.
One kitchen quirk worth knowing: beet colour hates alkali and long heat, so a cake with baking soda often comes out of the oven a sad brown-purple even though the batter was bright pink, which is why bakers add it to frostings and cold fillings rather than to the sponge itself. For babies starting solids after 6 months, beetroot is ordinary food, but keep their dishes free of added sugar and salt until age 1.
Beetroot powder for lips: a homemade tint
This is the fun one.
- Melt 1 teaspoon of your usual homemade balm base (or plain ghee or coconut oil) in a small steel bowl over hot water.
- Stir in 1/8 to 1/4 teaspoon of beetroot powder that you’ve sieved through a fine cloth. Unsieved powder feels gritty.
- Pour into a tiny clean tin, let it set, and dab with a fingertip.
You get a sheer berry flush that lasts until you eat or drink. Make small amounts and use within a month; throw it out if the smell changes. Beetroot powder for hair colour: what you’ll really see
Mix 2 tablespoons of powder into a cup of plain conditioner, spread it through damp, clean hair, leave it 30 to 45 minutes and rinse with cool water. On black or dark brown hair, you’ll see almost nothing indoors and a faint red-burgundy glint in sunlight. On grey, light or bleached hair, it turns properly pink. Either way it fades over a few washes. It stains pillowcases, towels and light scarves on the way out, and it does nothing for hair growth.
Myth: beetroot powder whitens skin and removes dark lips
A beetroot face pack or lip scrub leaves a pink tint for an hour, and that tint is the “glow” in most before-and-after videos. It doesn’t lighten skin. Dark lips usually come from sun, smoking, dryness, lip licking, some medicines or simply your genes, and the honest fixes (SPF lip balm, stopping smoking, treating dryness) are in our guide to dark lips and what really lightens them. Powder is concentrated beetroot, so a spoonful holds far more than a slice on your plate. It’s high in oxalate, so anyone who has had kidney stones should keep it to food amounts and check with their doctor, and it’s rich in natural nitrate (the reason “beet shots” are sold to athletes), so people with low blood pressure or on BP or heart medicines should ask before any daily drink, and never adjust a medicine around it. Large amounts can cause bloating or loose stools. Pink or red urine and stools after beetroot are harmless (more in our chukandar guide), but red urine when you haven’t eaten beetroot, or with pain or fever, needs a doctor the same day. On skin: patch test, nothing on broken skin, and stop if it stings.
Beetroot powder benefits: the honest list
As food, it brings the same things as beetroot itself in a smaller amount: some fibre, folate, potassium and those nitrates. As colour, it replaces artificial dye. As a cosmetic, it tints.
