Preserve with Sugar & Salt
In this video we’ll uncover how the right balance of sugar and salt locks water away, keeping jars fresh for months, and we’ll reveal the one simple trick that guarantees shelf-stability.
Water lock stops microbes
Bacteria, yeasts and molds need free water to grow. Sugar and salt are great water grabbers. When you stir enough into fruit, osmosis pulls water out, leaving it unavailable to germs. The less water left, the slower any microbe can multiply.
Murabba's sweet lock
Remember, a murabba isn’t sweet by accident. The sugar is the lock on the door.
Low-sugar jam risk
Cut the sugar in half and you haven’t just made it less sweet. You’ve raised the free water back into the range where yeasts and molds thrive, and the jam won’t set properly. Treat it like fresh fruit, keep it cold and use quickly.
Right ratios matter
For shelf-stable jam or murabba, weigh fruit and sugar to about the same amount. Cook until the syrup thickens, then pour into jars that have been boiled or oven-dried. Seal while hot, and store in a cool, dark cupboard.
Mould means toss
If you see any mold on jam, murabba or achaar, discard the whole jar. Mold roots spread below the spot, and some toxins survive heat. Also watch for bulging lids, fizzing, or a sour, alcoholic odor, these signal spoilage.
The one trick for shelf-stability
The key to long-lasting preserves is simple: use equal weight of fruit and sugar, bring the mixture to a thick boil, and store in hot, sterilized jars. This locks water away and prevents mold.
