Sun-Mushroom Vitamin D

We'll show how to turn ordinary mushrooms into a natural vitamin D boost, and reveal the single tip that makes all the difference.

Why it works

Mushrooms contain ergosterol, a cousin of the cholesterol in our skin. When UVB hits it, the molecule flips and becomes vitamin D2, just like sunlight does for us, giving you a natural boost.

Quote

A mushroom is a tiny solar panel that stores vitamin D instead of electricity.

Sun your mushrooms

Pick a sunny day between ten and two, slice the caps about half a centimeter thick, and spread them gill-side up on a clean tray. No glass, no stacking, just direct UV, and let the sun do the work.

Sun exposure time

Usually fifteen to sixty minutes in strong midday sun is enough to boost the vitamin D content.

Dry for storage

Leave the thin slices in the sun for one to two full days, bringing them inside at night, until they become crisp. After drying, soak them ten minutes in warm water before adding to rice, soup, or a vegetable stew. Then store in a dry airtight jar away from light for up to six months.

Cooking & common myths

Vitamin D survives quick stir-fry or sauté in a little oil, so add mushrooms near the end of a curry. A quick stir-fry or bhuna in oil keeps most of the vitamin, while boiling in water and discarding the broth loses more. Remember, windows block UVB and early morning sun is weak, so slice and spread at midday.

The one trick

The key is simple: slice the mushrooms, turn the gill side toward the sky, and leave them in direct midday sunlight. This single step is the only thing that guarantees the mushrooms actually get the sunshine they need.
