Sheer Khurma Quick Guide
In this video I’ll walk you through a classic Pakistani sheer khurma, break down its sugar content, and reveal a simple swap that cuts the sugar without losing flavor.
Ingredients by Weight
You’ll need full-cream milk, roasted vermicelli, a tablespoon of ghee, and eight dried dates called chuhare, which soften after soaking. These ingredients give the dish its rich texture and natural sweetness.
Sugar per Bowl
A 150 ml serving contains about 26 grams of total sugar, roughly half of it added by you, with the rest coming from milk, dates, and raisins.
Low-Sugar Date-Only Version
For a lighter version, leave out the extra sugar, soak ten soft dates in warm milk for ten minutes, blend into a smooth paste, then stir it in with the vermicelli and raisins for natural sweetness.
Gur is still sugar
Remember, gur, jaggery, adds the same sugar load as refined sugar, just with a richer caramel flavor and a hint of minerals, so it doesn’t lower the sugar count.
Eid Breakfast Tip
On Eid morning, start with a glass of water and a couple of dates, enjoy a savoury protein dish like eggs or kebabs, then after breakfast have just half a bowl of khurma to keep energy steady and avoid a heavy slump by noon.
Diabetes Guidance
If you have diabetes, stick to half a bowl, pair it with a protein-rich breakfast, and check your blood sugar two hours after eating; always follow the plan your doctor set for Eid to stay safe.
The One Tip to Cut Sugar
The one practical way to cut the sugar load is to skip added sugar entirely, soak soft dates, blend them into a smooth paste, and stir that paste into warm milk before adding vermicelli and raisins, giving natural sweetness without extra sugar.
