Today we’ll walk through the simple steps to make fermented rice safely, and we’ll reveal the one rule that makes all the difference for your health.

Cool the Rice Fast

After cooking, don’t let the rice sit warm. Transfer it to a shallow plate, fan it, and let it reach room temperature in about an hour. This stops the spores from waking up.

Cool within

The critical window is roughly one hour. If the rice stays warm longer, Bacillus spores can multiply and produce a toxin that survives reheating in your kitchen.

Soak and Ferment

Place the cooled rice in a clean bowl, pour over boiled-and-cooled water, cover with a lid, and let it sit in the coolest spot for eight to ten hours. In hot weather, pop it in the fridge.

Fermentation time

Eight to ten hours of soaking creates the gentle sourness and lets the beneficial bacteria develop, while keeping the rice safe to eat in the morning.
