Spice Up Your Dal

Ever wonder if a pinch of leaf powders can really lift your dal? Stay tuned, because the secret tip comes at the end.

What a tsp adds

A level teaspoon of equal parts dried moringa, curry leaf and kasuri methi powder adds roughly forty milligrams of calcium, about three-tenths of a milligram of iron, a dash of vitamin A and just five calories, nothing dramatic, but a nice boost.

Calcium boost

Forty milligrams of calcium is about the amount you’d get from two small spoonfuls of milk, so it’s a modest addition to your daily intake.

Iron amount

The iron contribution is under half a milligram, roughly three percent of a woman’s recommended daily allowance, so it won’t fix anemia on its own.

How to make & store

To prep the blend, start by washing about a cup of fresh curry leaves, pat them dry and spread them on a tray in the shade for a few days. Warm the kasuri methi briefly in a dry pan, then cool both, grind to a fine powder, and finally stir in the moringa powder without roasting. Store the finished powder in an airtight jar away from light to keep its flavor fresh.

Quote

Remember, the dal does the heavy lifting in the dish; the leaf powder is just seasoning that adds a subtle aroma and a tiny nutrient bump, not a cure-all.

The one tip

The single most useful tweak is to squeeze fresh lemon juice over your dal right before you eat it. The vitamin C in lemon dramatically improves the absorption of the plant-based iron, making that tiny amount more effective.
