Storing Roti Overnight
Ever wonder how to keep roti soft after a night? I’ll share a simple way that works for a day at room temperature and even months in the freezer.
At a Glance
A quick look: at cool weather a roti can sit out for up to a day, in the fridge it stays good for a couple of days, and in the freezer it can last for months if wrapped well.
How Long Does Roti Last?
Fresh roti holds a little steam inside that makes it soft. That same steam, if left uncovered in a warm kitchen, gives mould spores a perfect place to grow. In cooler weather the risk is lower, but on a hot, humid day the same roti can spoil in half a day. The key is to keep the moisture balanced and the environment cool.

When the roti comes off the tawa, stack it inside a clean cotton cloth or a roti rumal. The cloth soaks up extra steam while still keeping enough humidity to stop the edges from drying out. After a few minutes let the lid sit slightly open so the bottom pieces don’t get soggy. Once the stack has cooled, about an hour, fold the cloth over and move it into a sealed box or zip-bag. In summer, pop that box into the fridge for overnight storage.
Reheat Roti Soft Again
A cold roti feels stiff because the starch has firmed up. A gentle splash of water and a short heat revives it. On a hot tawa, flick a few drops of water onto the roti and warm it for fifteen to twenty seconds. In the microwave, wrap two or three pieces in a damp paper towel and heat for twenty to thirty seconds. If you like a little char, a quick pass over a gas flame with tongs puffs it up nicely, just watch it, it can burn fast.
Worth Knowing First
If you spot any green, blue, black, white fuzz or pink spots on a roti, throw away that piece and every roti that touched it. Bread and roti are porous, so mould roots spread beyond what you can see. Scraping the spot or reheating won’t make it safe, and you shouldn’t feed mouldy roti to pets either. A sour smell or a slimy feel also means it’s time to bin it, especially for pregnant people, the elderly, or anyone with a weak immune system.
Basi Roti Milk Claim
The old breakfast of stale roti soaked in cold milk is popular in parts of Punjab and Uttar Pradesh. Some videos call it a cure for sugar, blood pressure, and acidity. The science behind it is that when cooked starch cools, some chains re-align and form resistant starch, which digests more slowly. That can give a modest benefit for gut health, but it’s far from a medical solution. It’s a tasty habit, not a replacement for proper care.

A stale roti is still a roti. Count it like one.
Good Uses for Leftover Roti
Don’t let leftovers go to waste. Wrap a few pieces with last night’s sabzi for a quick roll, or brush them lightly with oil, sprinkle chaat masala and bake until crisp for tasty chips. You can also break them up and stir-fry with veggies for a speedy roti upma or turn them into noodle-like strands for a fun dinner. The possibilities are endless, and they’re perfect for lunchboxes or a snack.
