How iron leaches into food

Iron is a metal that dissolves a bit in acid and water, especially when it’s hot. When you stir a tomato gravy in a lohe ki kadhai, the spatula scrapes tiny amounts of that iron off the surface, and it ends up in the sauce. The iron you get is non-haem, the same type found in lentils and spinach, and your body only absorbs part of it.

Season your new pan

To get the best results, start by scrubbing the new kadhai with hot water, a little dish soap and a steel scrubber to remove any factory coating. Dry it, heat it for a couple of minutes, then rub a teaspoon of mustard or any cooking oil all over the interior with a folded towel. Wipe it again until it looks almost dry; thick oil will stay sticky.
