Sugar in Tamarind Sharbat

Ever wonder how much sugar hides in a glass of tamarind sharbat? Stay till the end.

Ingredients

The drink uses just two sour fruits: seedless tamarind for deep tang and dried plums for a smoky sweetness. Add water and a pinch of sugar.

Cook the Concentrate

Break the tamarind, rinse the plums, soak them in a litre and a half of water for an hour. Then bring to a boil, simmer fifteen minutes, mash, and strain. Cool before storing.

Freeze for Later

Pour the cooled concentrate into ice-cube trays. Each cube is about thirty milliliters, so two or three cubes in a glass of cold water give you an instant sharbat that also chills itself.

Added sugar regular

A regular glass uses eighty milliliters of concentrate, which contains roughly twenty grams of added sugar, plus natural sweetness from the fruit, ending up around twenty-five to thirty grams total.

Added sugar low

The less-sweet version cuts the added sugar in half, giving about ten grams from the syrup and fifteen to eighteen grams total per glass.

Tips for Iftar

If you’re prone to heartburn, sip water and a date first, then dilute the sharbat. Some people may get a quick bathroom trip, so start with a half glass. Watch for potassium if you have kidney issues, and count the sugar if you have diabetes.
