Cool rice within
Rice should be cooled and stored within one hour to limit bacterial growth.
Rice: The Real Risk
Cooked rice can harbour Bacillus spores that survive boiling. If the rice cools slowly on the counter, the spores wake up, multiply, and produce a toxin that heat can’t destroy. To keep it safe, spread the leftovers in a shallow tray about three centimeters deep, refrigerate within an hour, and reheat until every grain steams, stirring halfway in a microwave.
Spinach & Leafy Greens
Leafy greens like spinach, methi, and bathua are naturally high in nitrates. When left warm for hours, bacteria can turn some nitrate into nitrite, which is harmless for most adults but can be a concern for babies under one year. The safe habit is to chill the cooked greens quickly, keep them covered, and reheat only once until piping hot.
Eggs, Mushrooms, Chicken
Egg dishes, boiled, scrambled, or curried, store well in the fridge for up to two days. When reheating, heat them until they’re steaming, and slice boiled eggs first to avoid bursts. Mushrooms spoil quickly, so keep them cold and eat within a day or two; reheating them is fine if they were refrigerated promptly. Chicken pieces stay safe if cooled fast, then reheated until the bone feels piping hot.
