Cooking Dahi: Probiotics & Heat

We’ll find out if heating dahi wipes out its good bugs and the tip that saves them for a creamy bite.

Does cooking dahi kill the probiotics?

The friendly bacteria in dahi are alive at room temperature, thriving around 37 to 45 °C. Once the temperature climbs past 50 °C they start to die, and a simmering kadhi at nearly 100 °C for twenty minutes leaves almost none alive.

Live vs Cooked

A bubbling pot of kadhi looks and smells delicious, but the heat has already killed the live cultures, so it’s tasty but not probiotic.

Raita vs Kadhi: what each gives you

Raita stays cool, so the live cultures survive, giving you protein, calcium and B-vitamins. Kadhi, cooked to a boil, loses the microbes but still delivers protein, calcium and a soothing flavor. Both are nutritious; only raita keeps the probiotics alive.

Why does dahi split in Kadhi?

When dahi meets high heat and acid it can split, turning grainy as the proteins contract and squeeze out whey. Adding besan creates a buffer, keeping the mixture smooth. Whisk dahi with besan, then water, turmeric and salt, and simmer while stirring.

Kadhi simmer temperature

A typical kadhi reaches close to a full boil, around 100 °C, and stays there for about twenty minutes, which is enough to kill the bacteria.

How to keep dahi probiotics alive

To preserve probiotics, add dahi after you’ve taken the pot off the heat, let it cool a few minutes, then swirl it in. Make raita at room temperature with cooled veggies. Keep lassi and chaas cold, and eat fresh dahi within a few days for the best live count.

The one tip to save probiotics

The one practical tip: never heat dahi directly. Instead, finish your dish, remove from heat, cool briefly, then stir in the dahi. This simple step keeps the beneficial bacteria alive while still giving you a warm, flavorful meal.
