Scratch a kinnow and smell your fingernail. That’s peel oil, mostly limonene, stored in the tiny dots on the skin. Peel also has more fibre than the flesh, plus plant compounds called flavonoids (hesperidin is the best known) and a fair amount of vitamin C.
That sounds impressive, but keep it in proportion. You eat peel by the pinch, not by the plateful, so its nutrition is a small bonus. Its real value is flavour, fragrance and not wasting food.
First: wash it properly
Citrus is often sprayed in the orchard, and some packed fruit is waxed. If you’re going to eat or use the peel, wash it well.
- Wash the whole fruit under running water before peeling, rubbing it with your hands for about 20 seconds.
- Scrub with a clean vegetable brush if the peel feels waxy.
- Skip soap, bleach and “fruit washes”. Plain running water and rubbing are what’s recommended.
- Dry with a clean cloth.
- Throw away any peel with mould, deep bruises or soft rot. Don’t cut off the mouldy bit and keep the rest.
How to dry kinnow and orange peel
- Scrape off most of the white pith with a spoon. It’s bitter and slow to dry.
- Cut the peel into thin strips or small pieces.
- Dry in the shade on a clean cloth or tray, indoors or on a covered balcony, for 3 to 5 days in winter. Strong direct sun fades the colour and smell.
- Or use the oven at its lowest setting, door slightly open, for 1 to 2 hours, checking often.
- It’s ready when pieces snap cleanly, not bend.
- Store in a dry, airtight glass jar. It keeps its smell for about 3 months. Any damp or musty smell means throw it out.
Grind dried peel in a clean, dry grinder for a fine powder. Make small batches; the fragrance fades once ground.

Kitchen uses for citrus peel
Fresh zest
Grate only the orange layer of a washed kinnow or malta. A teaspoon lifts suji halwa, kheer, cakes, biscuits, or even a pot of rice. Fresh zest freezes well in a small box.
Dried peel tea (one cup)
Put 1 teaspoon of dried peel pieces in a cup, add hot water, cover for 5 minutes and strain. Add a slice of ginger or a crushed elaichi if you like. It’s a pleasant, caffeine-free drink with a light orange smell. It’s a flavour, not a medicine.
Candied peel (small batch)
Take peel from 3 kinnows, cut into strips. Boil in water for 5 minutes and drain; do this three times to remove bitterness. Then simmer in 1 cup sugar and 1 cup water for about 30 minutes, until the strips turn glossy. Drain, dry on a plate overnight, and store in a jar. It’s a sweet, so keep it to a few pieces.
Peel in cooking
Add a strip of fresh peel to pulao water or a pot of chai masala, then remove it before serving. Dried peel powder works in dry rubs for chicken.

Peel powder and dahi face pack
- Patch test first. Mix a pinch of the pack and apply it to your inner forearm. Leave 10 minutes, rinse, and wait 24 hours. Any redness, itching or burning means don’t use it.
- Mix 1 teaspoon of fine dried peel powder with 2 teaspoons of plain dahi.
- Apply at night on clean skin, avoiding the eyes and lips.
- Leave for 10 minutes, no longer.
- Rinse off completely with plain water, rubbing very gently in circles. Pat dry and moisturise.
- Once a week is enough. More often can irritate.
Sun burns: citrus juice and peel oils on skin, followed by sunlight, can cause phytophotodermatitis. It starts as a red burn or blisters and leaves brown streaks that can last months. Use citrus packs only at night, rinse them off fully, and never apply lemon, lime or peel paste before going out. Don’t use it on broken skin, active acne, eczema, sunburn or after waxing or threading. Stop if it stings, itches or reddens. Sensitive or very dry skin: skip it. Peel rinses for hair are popular online. There’s no good reason to expect peel water to stop hair fall or dandruff. A light rinse may make hair smell nice, but acidic rinses can dry the scalp, and citrus on the scalp before sun carries the same burn risk.
