How to Remove Fat From Nihari: Chill It, Then Lift It Off
Qorma and nihari fat sets solid in a cold fridge and lifts off in one piece, which hot skimming often misses. With Eid ul Adha 2027 expected around 16 to 17 May 2027, this is a trick worth keeping in mind for the Eid pot.
The short version
- Step 1: cool the gravy in shallow containers within two hours.
- Step 2: chill until the fat sets firm on top.
- Step 3: lift the layer off in one piece.
- Step 4: reheat until steaming hot, 165°F (about 74°C) in the centre.
- Quotable line: Fat floats while the gravy is hot and lifts in one sheet once it is cold.

Why does fat float on top of a pot of nihari?
Fat is less dense than the gravy beneath it, so it rises and floats. While the pot is hot, the fat stays liquid and spreads across the surface, which is why a spoon struggles to pull it off cleanly. Once the gravy cools in the fridge, the fat sets solid. A solid layer stays in one piece and lifts away. The gravy underneath may thicken as it chills, and that is fine. Reheat it gently and stir it through.
How do you chill and lift the fat off step by step?
- Cool within two hours. Spoon the qorma or nihari into shallow containers while it is still warm, so the batch cools faster than in one deep pot. CDC asks for perishable food to be in the fridge within two hours.
- Chill until the fat sets. Leave the lids loose while the containers cool, then seal them once they are cold. Wait until the fat is firm on the surface before you lift it.
- Lift the layer off. Use a spoon or fork to lift the set fat in one piece, then scrape any thin film left on the gravy.
- Reheat until steaming hot. Warm the gravy on the stove, stirring as it heats, until the centre reaches 165°F (about 74°C) on a thermometer. Stir in a splash of water if it has thickened too much.
- Bag the scrap fat. Put the lifted fat in a sealed bag or container for the bin, not down the sink, where it can block the pipe.
For how long the cooled gravy keeps, use the storage times in the Qurbani meat storage and cooking guide, which owns those times and temperatures. For next-day storage of salan, see why salan tastes better the next day.
Can you skim fat off nihari while it is still hot?
You can take off some of it, but not all of it. Use a wide spoon or ladle to lift the surface fat, then let the pot rest for a few minutes so more fat rises to the top. For a quick fix, lay a few sheets of kitchen paper on the surface for a few seconds and lift them off. Treat that as a workaround, not a full removal. A fine-mesh strainer can also catch small droplets as you ladle the gravy. Chilling works better, so use hot skimming only when time is short.
Does skimming make qorma or nihari lighter for the heart?
It takes away some of the saturated fat in the gravy. NHS advice links eating a lot of saturated fat to higher cholesterol and a greater risk of heart disease. The NHS advice is to trim visible fat and take the skin off meat and poultry before cooking. Skimming does not turn a rich dish into a low-fat one, and it does not change how much meat or ghee you ate. NHS guidance on saturated fat is no more than 30 g a day for an average man and no more than 20 g a day for an average woman.
Who should limit fatty red meat?
People with raised cholesterol or heart disease are usually told to cut back on fatty cuts, sausages, bacon, salami and pancetta, which the NHS lists as sources of saturated fat. Anyone with diabetes, kidney disease or a family history of heart problems should ask a doctor or dietitian how much red meat fits their plan. This article does not set a limit for you. If you take a medicine for cholesterol, blood pressure or diabetes, the doctor decides any change, not a recipe.
After a heavy Eid, the high cholesterol after Eid reset covers the wider eating plan, which this article does not repeat.
Hot fat and gravy scald, so keep children and pets away from the pot while you skim. For a burn, run cool running water over it for at least 20 minutes, and do not apply butter or oil. Call emergency services for a burn about the size of your palm or bigger. See a doctor if you have raised cholesterol or heart disease and are unsure how much fatty meat to eat.
Fat that sets in the fridge lifts off in one piece, and that is the whole trick.
The small-cup check
Before you chill the whole pot, pour a spoonful of the gravy into a small cup and put it in the fridge. If fat sets in a clear layer on top, the big batch will behave the same way. This is a quick check you can do at home, not a lab test.

Questions people ask about removing fat from nihari
How do you remove fat from nihari?
Cool the nihari in shallow containers within two hours, chill it until the fat sets, then lift the solid layer off in one piece. Reheat the gravy until steaming hot, which means 165°F (about 74°C) in the centre.
How do you skim fat off a pot?
Hot skimming takes off the surface fat with a wide spoon or ladle, and a few sheets of kitchen paper can lift a thin layer. It leaves some fat behind. For most of the fat, chill the pot and lift the set layer off.
How do you remove oil from nihari?
Chill the gravy until the oil sets on top, then lift it off. Do not expect a hot pot to give up all of its oil. Reheat the gravy gently and stir it back together once the fat is gone.
How do you remove excess oil from food?
For any gravy or curry, the reliable method is to chill it, let the fat set, and lift it away. Hot skimming works for a quick fix. Blotting with kitchen paper helps a little, but it does not remove everything.
Is chill then skim fat better than skimming hot?
Yes, if you have the time. Chilling lets the fat set into one layer that lifts off cleanly, while hot skimming leaves much of the fat behind. Use hot skimming only when there is no time to chill.
Is the fat in nihari bad for cholesterol?
Eating a lot of saturated fat can raise cholesterol and the risk of heart disease, and fatty meat is a major source. Removing visible fat helps cut some of it, but it does not change the total you eat. If you have raised cholesterol, ask your doctor or dietitian how much fatty meat to eat.
Can you freeze nihari after skimming the fat?
Yes, once it is chilled in shallow containers and cooled in time. Freeze it flat and label it with the date. The freezing guide covers the batch plan in detail.
What temperature should reheated nihari reach?
Reheat it until steaming hot all the way through, to 165°F (about 74°C) when checked with a food thermometer in the centre. Stir the gravy while it heats so the centre is not left cold.
Who should limit fatty red meat?
People with raised cholesterol or heart disease are usually told to limit fatty cuts, sausages, bacon, salami and pancetta. If you have diabetes, kidney disease or a family history of heart problems, ask your doctor or dietitian how much red meat fits your plan.
