Air Fryer Samosas vs Fried at Iftar: Which Is Healthier?

An air fryer uses far less added oil than a deep fryer, so an air fried samosa is usually the lighter choice at iftar. The pastry, the filling and the number you eat still decide how heavy the plate turns out.

The short version

  • Oil: deep frying lowers the food into boiling oil. The NDSU Extension describes air frying as tossing the food in about a tablespoon of oil instead.
  • Taste: in a 2025 French fries study, a tasting panel liked the deep fried version significantly more.
  • Acrylamide and HMF: the same study reported significantly higher levels of both compounds from hot air frying than from deep fat frying. A university extension note cited below points the other way for high carbohydrate foods, so the evidence is mixed.
  • Calories: the sources give no reliable samosa calorie figure, because pastry, filling and size vary too much for one number.
  • Rule of thumb: the pan changes the oil, but the number on your plate changes the meal.

This guide sits in our Ramzan Health section and compares the two ways people cook samosas for iftar. It sticks to what the sources say, and it does not invent an oil figure or a calorie number for your kitchen.

Is an air fried samosa healthier than a deep fried one?

In one clear way, yes. The NDSU Extension describes air fryers as more like convection ovens than deep fat fryers, and says the appliance circulates very hot air in a small space. Instead of lowering the food into boiling oil, you toss it in about a tablespoon of oil. So far less oil goes into the food itself.

The method does not change everything else. The pastry flour, the potato or lentil filling, the salt and the chilli stay the same. A lighter cooking method does not cancel out a bigger count, so four air fried samosas can still add up to more than two fried ones.

No published test of samosas themselves turned up in the sources used for this guide. The honest comparison is therefore the method and the portion, not a figure in grams of oil per piece.

Does air frying change the taste, or the chemistry?

It changes the bite. The NDSU Extension says air frying usually gives crunchy food with a browned exterior, but the food will not have the same mouthfeel as deep fried food. Expect a different texture rather than an identical one. For how oil temperature shapes crunch in deep frying, see our deep frying temperature guide.

A 2025 study in the journal Coatings compared deep frying and hot air frying on French fries. A tasting panel liked the deep fried fries significantly more than the air fried ones. Fries are not samosas, so read this as a signal about taste, not a verdict on your iftar snack.

The same paper also reported a catch. Hot air frying produced significantly higher levels of acrylamide and HMF, two compounds the study measured in the fries, than deep fat frying did. The NDSU Extension note cited above points the other way for a study of high carbohydrate foods, where air frying could reduce acrylamide formed during deep fat frying, so the evidence is mixed. The coatings in that paper markedly reduced both compounds. The record used for this guide does not list the frying times or temperatures, so it cannot tell you what your air fryer does to a samosa. Treat it as a reason to keep all fried iftar foods occasional, whichever method you use.

How do you make air fried samosas at iftar?

This method uses the oil amount from the NDSU Extension and checks the result by eye and feel rather than by a fixed minute count. If you reuse frying oil afterwards, our guide to reusing frying oil covers smoke points and storage.

  1. Lay the samosas in a single layer in the basket, with a gap between each one so the hot air reaches the pastry on every side.
  2. Toss or brush them with about one tablespoon of oil in total, spread by hand so each samosa has a thin film of oil.
  3. Cook, then check at intervals instead of trusting a set minute count, because basket size and model change the time.
  4. Stop when the shell is evenly golden and feels crisp, not when a timer runs out.
  5. Put the number you plan to eat on a small plate before you sit down, and put the rest out of reach.

For another air fryer test on a single ingredient, see our potato peel chips guide.

Try this: measure the oil before it goes in

Pour your tablespoon of oil into a small spoon or cup first, then tip it over the samosas as you go, rather than pouring straight from the bottle into the basket. You will know exactly how much went on, and that is the one oil number you can measure at home.

Does air frying change the calories, or only the oil?

Mainly the oil. The NDSU Extension says an air fryer could trim fat and calorie intake, but the sources in this guide give no calorie figure for a samosa, because the pastry, the filling and the size vary too much for one number. A bought samosa has a packet label you can check. A homemade one is a matter of adding up the ingredients you used.

So the fair comparison at iftar is simple. Air frying cuts the oil you add to the pan, and portion size decides the rest. For how often and how many to eat in Ramzan, see our pakoras and samosas at iftar guide, which covers portions in more depth.

Take care if

You have diabetes, take any medicine, or have a heart or kidney condition. The pastry and filling stay the same, so portion size still matters. Ask your doctor or dietitian how a fried iftar snack fits your plan, because this guide changes no medicine and sets no dose. Diabetes UK says that if your blood sugar drops below 4 mmol/L (about 72 mg/dL) you must break your fast. For high readings it says to ask your healthcare team what a high level is for you, and to break the fast and seek medical advice if you go above it. See a doctor if you feel faint during the fast, or if your readings keep going outside the limits your team gave you.

Air fried samosa questions for iftar

Are air fried samosas healthier than deep fried ones?

Usually, yes, in one clear way: an air fryer uses far less oil. The NDSU Extension describes tossing the food in about a tablespoon of oil rather than immersing it in boiling oil. The filling and the pastry stay the same, so portion size still matters.

How many calories are in an air fried samosa?

The sources used for this guide give no reliable figure, because pastry, filling and size vary too much for one number. For a bought samosa, check the packet label. For a homemade one, add up the ingredients you used and divide by the number of pieces.

Do air fried samosas taste the same as deep fried ones?

Not quite. The NDSU Extension says air fried food gets crunchy and browned, but it will not have the same mouthfeel as deep fried food. In a 2025 French fries study, a tasting panel liked the deep fried version significantly more.

How much oil does an air fryer need for samosas?

About one tablespoon, tossed with the food, is the amount the NDSU Extension describes. Treat it as a starting point, then adjust after you see how the shell browns in your own basket.

Can you air fry samosas with no oil at all?

You can try, but the extension method uses about a tablespoon, so start there. Without any oil the result may differ from what you expect, so test a small batch first before you cook for the whole table.

Is acrylamide a concern with air fried samosas?

It is a caution, not a verdict on this dish. The 2025 Coatings paper reported significantly higher acrylamide and HMF from hot air frying than from deep fat frying, but it tested French fries, not samosas. A university extension note reports the opposite for high carbohydrate foods, so the evidence points both ways. Keeping all fried iftar foods occasional is a sensible way to read it.

What temperature and time should I use for samosas?

The sources in this guide give no reliable temperature or time for samosas, so start with your appliance manual. Check the shell for even golden colour and a crisp feel, then write down what worked so next time is easier.

Can someone with diabetes eat air fried samosas at iftar?

Ask your doctor or dietitian before you plan them into iftar. The pastry and filling stay the same, so portion size still counts. This guide does not change any medicine or set any dose for you.

Is an air fried samosa good for weight loss?

It can be a lighter choice, but no single snack decides weight change. A lighter method does not cancel out a bigger count, so the number you eat still matters, along with the rest of the plate.

How many samosas should you eat at iftar?

The sources here do not give a safe number, and the right count depends on your health and your plan. Our portion guide for pakoras and samosas at iftar covers how often and how much to eat in Ramzan.
